You say "it smells great" when you're all done, just how funky was your pack? The belt on my Osprey is F-U-N-K-Y and I'm actually afraid to use it as I know how much it will reek after the first bead of sweat hits it and activates the stench. I'm going to use the Nikwax on it, just wanted to hear your thoughts - the before and after.
My pack wasn't too funky when it came to smells. I train jiu jitsu and I have a constant battle of keeping my Gi and rashguard from being stinky. They will smell clean but like you said, as soon as I sweat a little bit, the funk comes back. Let me know the results of your cleaning. Thanks!
I’m curious about the drying time when hanging outside in those temps. I need to clean mine for an upcoming 3 day trek that starts tomorrow and I’m not sure if it would dry in time. It is supposed to be cloudy today - I may have warmer temps, but probably not a lot of sun. Thanks!

There are some days I just take a bottle of water and leave the pack at home. But I always feel weird not having any tools/pump/etc with me.

It would probably be dry within a few hours but it will definitely be clean!
