Just an FYI, when you are cooking a lobster tail, cook it with the shell down and meat up. It's more tender and the shell acts like a container for the juices.

That was lobster and chicken with rice. For paella you need to fry off the rice then cook it with spices/herbs and slowly added good stock and plenty of wine. Add the part cooked chicken then finally add the cooked lobsterat the end. That way the rice is full of flavour...
Pro tip for freezing bacon. Cut the package in half and then section it into 4 separate portions and wrap them in cling wrap before you freeze them. Then they come out in perfect serving sizes and you don't have to thaw the whole pound.

Texas Spanish rice: Rice Cumin Garlic Onion Mexican oregano Salt Black pepper Tomato sauce Chicken broth Olive oil In large pan add oil to a medium heat, add cleaned rice to oil and saute till rice is a golden color. Add in Garlic and onion put on low and cover pan. Cook for about 5 minutes. Add in all other seasoning to taste along with tomato sauce. Then add in chicken broth till it covers rice up to one inch above rice. Bring to a boil, then put on low and cover. Leave covered and unstired for 15 to 20 minutes or until you see no more liquid above the rice. Turn off and let sit for 10 minutes. Fluff rice and serve.
A few tips to make paella-like rice without the husstle of making proper paella. Keep some spicy sausage available, chorizo, spicy salame (I think you call it pepperoni?), I personally use nduja but I don't think you can find any in the americas. If you don't have any of these, at least use some chily pepper spicy aroma/spice, it helps a lot. Cook the rice on a pan (or at least finish it on the pan), and try to brown it on the bottom, making crusty crunchy rice bits (try not to burn it, dark brown is ok, black not so much). These 2 things will already make it a lot better. If you want to go overboard, take the lobster heads and tail-shells and make a broth with them (adding anything you have, like burnt onion skins, anything !) , make it beforehand, and use that broth to cook the rice in it, in the pan, adding a bit of liquid at the time, just enough to cover the rice, until it's almost cooked, then give it a few minutes without liquid to make it crunchy at the bottom (as said before). Enjoy!

Next time cook the rice with the sauted veg and seasoning, including the lobster shell. Then remove the shell at the end and add the protein.
