Unless you plan to ride into the centres of the 8 cities, which are Paris, Lyon, Grenoble, Lille, Strasbourg, Toulouse, Chambery and Marseille, the Crit’air sticker isn’t anything to worry about. Also unless you bike is newer than 2020 you can’t get one and are banned from the low emission zones anyway. I’ve been travelling in France for many years and if I intend to entre a city I park before the zone and bus in.
Loads of gorgeous balcony roads around there. You could spend a week just doing those. Lovely part of France.

go down further to the west, stay overnight in millau and then cross the bridge in the morning. it's incredible.
