I mean you can definitely save many hundred buckaroos by just using a goddamn fucking tamper, it's one of the few things in espresso that doesn't benefit from rocket science (it's only important to compact enough so that no air pockets remain because channeling, other than that it just has to be level so water flows evenly for the same reason) the puqpress is really only useful in a cafe (for repeatability and ig reliability, maybe speed but not really) other than that it's just excessive and unnecessary, also it's being demonstrated in quite the horrible routine since the grounds were not even distributed properly so channeling will likely be a thing

The coffee in the hopper isn't necessarily stale, it could have been recently roasted
