The problem with starting the wrap at the stem is that the normal hand force at the drops is downward, which tends to cause the exposed edges to roll. I'd be interested to hear if you found this a problem.

I rode 1300 miles last year with this wrap and it still is holding up just fine, fortunately. The edges have stayed pretty flat.

SuperCaz takes longer to wrap if you want to get it right

But what if the junction box is the bar plug area? How do you wrap from the top and lock at the bottom?

It’s not necessary to remove the junction box. cut the bar tape diagonally, and then wrap like you normally do. The bar tape should hold itself in place.
Personally (and I'm no bike mechanic) I like to wrap a bit of electrical tape to the drop, sticky side out. This holds the bar tape in place more securely, and also makes sure it stays on in the event of a crash.
Calvin Jones also mentions this at 12:15 in this video.

Probably should take this video down. You are wrapping the bars in the wrong direction.

Hi. This holds just fine and has for over a year. I did 1300 miles on it last year alone.
