    I think I'm going to give this a try! Sous vide the tongue with a big dollop of Wagyu tallow in the bag for several hours, then throw it on the smoker.

    Again, thanks for making these videos. As someone who never has tried tongue, does it have a flavor and texture to a more common cut of meat?

      Yes! Its a muscle just like any other cut of meat. Nice and marbled with fat and connective tissue that breaks down in the confit.

      It tastes like beef, because it is beef. The texture is a bit different; a finer "grain" than the large muscles like brisket. Nearly every authentic Mexican restaurant has "tacos de lengua", which is chopped/shredded tongue.
