I'm pretty sure the reason why she wasn't startled when Nanny Mcphee appeared, was considering since she was in the armed forces, i'm pretty sure she's seen even more frightening things other than a nanny magically appearing out of nowhere.
She’s had to feed men who were missing eyes, limbs, organs, teeth, etc. And who were also wrapped head to toe in pus leaking bandages. Seeing Nanny Mcphee in front of her is like seeing a super model compared to the monstrosities she had to witness.

my grandma did actually feed me peelings soup when I was a child, she did strain it for me, but it was the most delicious thing ever "NOTHING GOES TO WASTE IN MY KITCHEN CHILD" was the phrase she'd use to explain the weird mix of stuff that went in that broth
I had a similar experience in my childhood. Except it was okra, lumpia (bitter melon), and rice. Oh, and we didn't have a choice on the matter, it was the only food we could afford for a year.
My parents told me the kinds of things they ate as kids like beans and cornbread, new potatoes fried in a little bacon fat, goulash, and things like that. Not a lot of meat around in my mom's house unless it was ground beef, and she told me she had never even had a steak until college because they couldn't afford it. Sometimes the things you make with trimmings and stuff that you don't waste can make some really delicious food. Part of why we have hot dogs because those are all made with meat trimmings close to the bone and other meat scraps.
Didn't even blink. Not phased in the least. Love this part, and the way they pluck the violin when her eyes get all spastic when she's trying to remember if she has peelings to make that awful grey soup slop.

I always love it when movies build up a joke over the course of the film, and then have it pay off at the end. Shows a lot of foresight.
