I cooked a similar dish long time ago. My in-laws sneered and snubbed my dish. In Philippine cuisine, cucumber is only used as garnish or salad, not in stirfry.You are right. Cucumbers are packed with vitamins and minerals, considered a superfood by scientists/nutritionists. I always thought there should be another way to serve cucumber than as BORING salad, pickles and as an afterthought to sandwiches and as garnish. It is so underrated. Thank you for the recipe. EDIT : There is a scientific reason for stirfrying cucumbers. It contains FAT SOLUBLE VITAMINS only made usable in combination with oil or fat in stirfrying or in salads. Otherwise, those nutrients go down the toilet .
