This is the absolute best sable cookie recipe! I've used it so many times already and finally made a matcha version, which currently rests in the freezer. Thank you for your awesome work and delicious recipes! ✨
I'm so impressed with your videos - so pedagogical and detailed in everything. There's a lot of work behind such presentations, I know that, making even very difficult steps seem within reach. Thank you so much.
Oh my... To meet you chef is my dream in this lifetime... the dedication with which you teach all steps with so much clarity... Lots of respect and appreciation for you..
I tried this but didn't get to taste it. I'm sure it's good because my housemates didn't even wait for it to cool off. The cookies were all gone when i came back. Thank you, Hanbit!!
Just tried this recipe and it’s amazing! Initially wasn’t sure what to expect as I’ve never tasted a sable cookie before, but as I bite into one I totally get what u mean by “they burst in your mouth like sand”! So good! I did have a bit of trouble rolling the dough into a nice cylinder as the dough was too soft, but all in all the cookies turned out really good! Thanks for the recipe 🤩😁
Not a big fan of cookies but these babies I have to try n make them. PS : Made a tart using your almond cream recipe and pair it off with fresh freestone peaches over the weekend. It was amazing!! I’ve got fresh apricots and am thinking of making another one. Thank you for such an awesome recipe.
I made these cookies and they are so good! Very well balanced. How can i adjust the recipe if i wanted to use red bean paste? Or even fruit flavors? Or fruit syrups? Thank you Chef!
Right, i've looked it up! so take out cocoa powder and add 2~3% matcha powder out of the total weight and it'll work! so in this case it'll be around 5g of matcha!
Hello Chef, thank you for sharing this recipe. Can I ask about using almond flour into the dough? I watch in some video, they're using cake flour and almond flour, what do you think about that? Thabk you, Chef
i wonder why is mine always fell apart when i cut it 🥲🥲 i once thought bcause i didn't freeze long enough/corporate the dough enough. I did that but still the under part is crumble when cut. any ideas? 😭😭
Hi Hanbit! I was hoping to make some buckwheat sable cookies with your recipe, could you advise on how to adjust the flour ratios please? Thank you so much, huge fan of your content!
i made it now but my cookie is widening. what did i do wrong chef ? is it because of the flour difference or what ? becaude i didnt overly cream the butter, just like a minute or two maybe.
Just found out and subscribed to your channel a week ago :) Thank you so much for sharing your recipes, tips, tricks and knowledge. I have one question to ask. Does type of the butter matter? I used to try making sablé cookies with 82% fat butter a few times before, but they didn't turn out the same way as the one that I bought from French bakery. I think I creamed the butter until it's light and fluffy. But the cookies turned out a bit denser and heavier than what sablé cookies should be.
@@HanbitCho Thank you so much for your quick reply. I will definitely make them using your recipe :) May I asked which kind of butter that you recommend for making sablé cookies?
I ve seen a lot of your video and they are fantstic both in how do you explain and the editing, in this case i have to disagree the sable cookies are made different , not with the creaming(direct method) but with the sable method that is putting flour and the cold butter together till they are sand, then adding the fine sugar and for last the eggs with the salt.
Right, i've looked it up! so take out cocoa powder and add 2~3% matcha powder out of the total weight and it'll work! so in this case it'll be around 5g of matcha!
this is the BEST buttery cookie recipe i’ve used!!! thank you for reuploading this video hehe
no probS!

Right, so take out cocoa powder and add 2~3% matcha powder out of the total weight and it'll work! so in this case it'll be around 5g of matcha!
Can I substitute cocoa powder with green tea powder at same amount of 10g ? Thank you

Hi Hanbit!

yep! never tried it that way though!
Those look so delicious and easy to make. Thank you!
You are so welcome!
Chef Hanbit thank you for your amazing recipe as usual!! ❤️ Any idea why my sugar coating melted unlike yours?
hmm really?? try and coat more sugar!
Hello chef how long when you roll the dough into cylinder shape?thanks in advance
hello!
Can I omit the sugar coated? Will it affect the texture or anything of the cookie?
yeah
Thanks Hanbit another great recipe 👏, If i want to make a Matcha version should I use the same ratio as Coco Powder ?? Respect Chef always 😊
oh i've never tried it - but with matcha you need far less than cocoa powder - matcha is much more concentrated. so try it that way!
@@HanbitCho Lol that's true haha never came in mind the concentration, let me know pls in case you find out 👍, thanks again Hanbit
Right, i've looked it up!

hi how to make the cookies perfectly rounded like yours? mine can't keep the shape :')

the cookie is spreading to the side i mean
This sables recipe will be added to my recipe repertoire; some special occasion coloured sugars could be used; thank you.

Can we use vanilla extract, instead of vanilla powder?
yeah but it won't give much vanilla flavour.
@@HanbitCho thank you 😊😊😊
Would it be possible to leave it in the freezer over the night to then coat with sugar and cut the next day?
yep that works!
is sugar powder the same thing as icing sugar?
not exactly the same but you can think of it as sort of the same thing
