    Just tried this recipe and it’s amazing! Initially wasn’t sure what to expect as I’ve never tasted a sable cookie before, but as I bite into one I totally get what u mean by “they burst in your mouth like sand”! So good! I did have a bit of trouble rolling the dough into a nice cylinder as the dough was too soft, but all in all the cookies turned out really good! Thanks for the recipe 🤩😁

    Not a big fan of cookies but these babies I have to try n make them.
    PS : Made a tart using your almond cream recipe and pair it off with fresh freestone peaches over the weekend. It was amazing!! I’ve got fresh apricots and am thinking of making another one. Thank you for such an awesome recipe.

      yeah you can use extract - just a few drops! you can use all purpose flour!

      Right, so take out cocoa powder and add 2~3% matcha powder out of the total weight and it'll work! so in this case it'll be around 5g of matcha!

      oh i've never tried it - but with matcha you need far less than cocoa powder - matcha is much more concentrated. so try it that way!

      yeah you need to work fairly fast before the dough becomes soft!

    i wonder why is mine always fell apart when i cut it 🥲🥲 i once thought bcause i didn't freeze long enough/corporate the dough enough. I did that but still the under part is crumble when cut. any ideas? 😭😭

    Just found out and subscribed to your channel a week ago :) Thank you so much for sharing your recipes, tips, tricks and knowledge. I have one question to ask. Does type of the butter matter? I used to try making sablé cookies with 82% fat butter a few times before, but they didn't turn out the same way as the one that I bought from French bakery. I think I creamed the butter until it's light and fluffy. But the cookies turned out a bit denser and heavier than what sablé cookies should be.

    I ve seen a lot of your video and they are fantstic both in how do you explain and the editing, in this case i have to disagree the sable cookies are made different , not with the creaming(direct method) but with the sable method that is putting flour and the cold butter together till they are sand, then adding the fine sugar and for last the eggs with the salt.
