    BETH'S PECAN BARS
    Makes 18 small bars or 9 large squares

    INGREDIENTS:
    For the Crust:
    1 ½ cups (360 g) of butter
    1 cup (200g) white sugar
    1 egg
    2 tsp (10 ml) vanilla extract
    ½ tsp (2.5ml) salt
    4 tsp (20 ml) orange zest
    3 1/3 (400g) cups of all-purpose flour
    For the topping:
    ½ cup (120 g) of butter
    1 cup (180g) light brown sugar
    1/3 cup (80 ml) honey
    pinch of salt
    1 tbsp (15 ml) heavy cream
    ½ tsp (2.5 ml) vanilla extract
    3 ½ cups (525 g) of raw pecan halves
    METHOD:
    Preheat Oven to 350F (176C)
    To create the crust beat together the sugar and butter with an electric mixer. Once fluffy add the egg, and vanilla and beat to combine. Then add the salt and orange zest beat to combine, then add the flour in thirds, beating after each addition.
    Turn dough out and fit it into a 10 x 10 pan that has been sprayed with baking spray. Preferably a removable bottom pan, otherwise line a 10 x 10 brownie pan with parchment paper or foil (2 sheets going opposite directions) this will make it easier to remove the bars once they are done.
    Bake crust for 25-30 minutes or until fully set and golden brown.
    Meanwhile prepare the pecan bar filling.
    In a large sauce pot combine butter, brown sugar, honey and salt. Set over medium heat, whisking while the mixture melts and combines. Remove from the heat. Whisk in heavy cream and vanilla.
    In a large bowl place the pecan halves, pour filling mixture over pecans and toss to combine so that all the nuts are well-coated.
    Once crust has baked and is slightly cooled. Pour the pecan mixture on top, spreading it out with a spatula to form an even layer, making sure all corners of the crust are covered with the pecans.
    Place back in oven, placing a baking sheet lined with foil, under the pan to catch any drippings.
    Bake for 25 minutes, until filling is set. It will still look a little wet, but that’s OK it will set up as it cools.
    Allow to cool completely at room temperature. Then place uncovered in the fridge for at least 2 hours, or overnight is even better to fully set. They will be easier to cut if you allow to stay refrigerated overnight.
    Remove from pan, slice the pecan bars into 9 squares, and then cut each square in half to create a bar. Keep the pecan bars in the fridge until ready to serve. Lightly covered.
    30 minutes before serving bring the bars to room temperature. Place on a cake stand and serve! Enjoy!

    This is such a neat idea. Such a time saver for the busy thanksgiving feast (especially because we always invite family and friends, so any time saver is welcome) and they look incredibly delicious.

    I have made these a number of times. They are awesome, but very, very sweet. I reduced the amount of sugar and brown sugar slightly, and they were perfect. As I mentioned below, do not omit the orange zest in the base! Also, when removing the dough for the base, be sure to put it on a lightly floured surface and knead a couple of times before patting into the pan. One time, the dough was too sticky, and it was difficult to put it in the pan because I didn’t first dust it with flour. It then baked too doughy. It needs to be firm enough to pat into the pan.

    I just made these in preparation for Thanksgiving 2020 🦃 and of course had to sneak a little taste... 😉 Delicious 10/10! 🤤 I didn't have a 10x10 pan and instead used a 9x13 pan. The crust is the right thickness but greedily I felt it could use a bit more topping (also given my slightly bigger pan). Next time I will 1.5 the topping recipe. Also, for anyone reading I omitted the orange zest as I don't like the texture of zest (orange or lemon) and the crust turned out great. They are decadently sweet so I cut them into bite size bars for just a little hit of sugar... Super easy to make. 🤗 Thank you for a wonderful recipe.

    Mmm pecan bars are one of my favorites. I think your right Beth this would make a lovely addition for Thanksgiving. We can eat these between our 3 giant main courses to ensure were stuffed all day long without any chance of a break 😂 Thanks for your fall recipes!

    These look easy and delicious! I love the idea of the orange zest in the crust, I think that'd really help balance out how sweet pecan pie/bars can be. Also I love all things citrus so it's a win win haha

    An old German baker in our town used to make these many years ago, but the pecans were mixed with maraschino cherries. Omg, they were fabulous! If you are feeling health conscious, amazon sells cherries from Tillen Farms without any nasty ingredients.

    I just made these and they are awesome! I think I will try them next with corn syrup for the traditional pecan pie flavor and a drizzle them with chocolate to pop the orange in the crust. ❤️

    This is perfect! Being the good Southern girl that I am, pecans are a food group as far as I'm concerned, but I'm the only one in the group I will have for Thanksgiving that likes pecan pie and I DO NOT want an entire pie around the house. I will make this, satisfy my craving and give the rest away!!

      L S my boyfriend loves pecan pie and I love that this recipe has honey instead of corn syrup. Is there a huge difference in taste and consistency compared to regular pecan pie filling?

    Pecan pie isn't really a big thing in the UK but I love it and this recipe is so easy and looks delicious so I definitely need to make it this Christmas!

    There's a Chinese American deli here in San Francisco that makes these fresh on a regular basis, probably depending how fast they sell. They are delicious. Tastes just like pecan pie.

    Do we have to use honey? The honey i have doesnt taste good and im afraid it would ruin the taste, i dont have corn syrum either. Are those necessary or can i just use butter sugar heavy cream and vanilla only?

      No I would would just use all around heat, otherwise the sugar and nuts could burn :)

    Those look divine! Do you think the recipe would work with hazelnuts? I have a friend who loves hazelnuts, but not with chocolate or nutella.

    If I am not a fan of orange zest, is it okay to add a smaller amount, or will it ruin the flavor profile? Also is the orange zest flavor really strong? because if its not I'll just keep it. Thanks!

      So i made it with the recommended amount of orange zest, and the crust tastes fine, but for some reason I was short on caramel topping :(. also, your caramel looks a little darker than mine, is that normal, or is my caramel not dark enough?

    Beth, I LOVE pecan bars, but was diagnosed with a dairy allergy. I’m trying to navigate the holidays with special dietary needs. Do you think this recipe could work if I substituted a dairy free “butter” like Smart Balance for the real butter? Thanks!

      You knowKaitlin, I wish I had more experience baking with things like that. I would say if you've had success baking cookies with it, then it should be OK. But if you do try it, let me know because now I'm curious?! :)

    These look so good! I have a couple of questions. Do you think some salt could be added to the pecan - caramel mixture to cut the sweetness a touch? And can this recipe be halved? If yes, what size baking pan would you suggest? Thank you!

      Oh sure you could add salt. I would actually sprinkle some Maldon Sea salt on top of the pecan bars just before baking. Then it would set in and you've have a fantastic salted caramel effect! That would be so good. You could cut the dough in half for a thinner crust, but I would keep the 10 x 10 pan since I'm not sure what size would be smaller? After baking. Slice them, and freeze half the batch. Just thaw them out in the refrigerator the day before you want to serve them :)

    Great job Beth - I will make this yummy recipe very soon thank you so much for not using Karo syrup or the like. It's a turn-off for me to use too much sugar in any recipe.

    I know I mentioned last week about the steak and you said you'll work on it (Cannot be thankful enough :) ). I have another request please. So you have inspired me all the way that homemade is always better than the stuff in the jar. Totally agree (High Five). So can you please help me with two sauces: Homemade marinara sauce for my pasta and homemade chocolate sauce for my vanilla ice cream that I can store in a jar :)

      MYTYREIGN TV it can be left out. Most shortbread crusts doesn’t call for it. I think it’s just her special touch for extra flavor.

      I would stay with the heavy cream. I'd be afraid the milk would be to runny and not allow the bars to set up properly. Then they would be hard to slice :(
