Just made this. Had to modify it a little based on what I had on hand but it turned out great. I did make a beef broth using soup bones and beef shank first. Not sure if it's all in my mind or what but this soup actually makes me feel physically and mentally well. Homemade broth to soups are probably completely underrated and overlooked. Okay, here's another way to describe it: it's the exact opposite of how you feel when you eat fast food and have that sudden feeling that you really shouldn't have done that, as you now feel sick and sluggish. This soup makes you feel nourished on a deep level and positive energy goes up.
Takes me back to growing up, but also made this all the way through until my husband passed away. Need to get back into making it again for my son and myself. Thank you!

Yum, we ate it for dinner last night. I make a big pot and freeze portions. I do cook my barley separately so it does not soak up all the broth. I may try tomato paste next time.
Yes use Chuck Roast however even in Walmart or any other grocery store with a meat department you can ask them to make it into ground chuck. I'd suggest that because it makes it easier to eat it's not chewy that way and you can shape them into small meatballs that's superior imo because they become so tender you can easily chew them. You can also add seasoning to the meatballs themselves which enhances the flavors in the soup.
I watch your videos for the perfectly detailed explanations. It helps so much to see things like how the tomato sticks to the bottom of the pan. It makes all the difference, makes me confident enough to actually make your recipes, & makes my family happy at dinner time! Thank you!

For me, one of the keys to stress free cooking is being mindful about my pantry at all times…some meals i literally can make on the fly out of my pantry, freezer and fridge. ❤

One of my childhood favorites. I really love the herb bundle touch. At about 8:45 into the video, I noticed you used a bench scraper with sides to put the veggies in the pot. I love that! I’m always dropping chopped veg on the floor, lol. Did an Amazon search and found out Rachael Ray put this out. Just ordered it, thank you.❤
This is so delicious! I made this week but had to use dry herbs since I couldn't find them fresh. It was fantastic. My son and his wife had their second child this week, so my wife and I took several helpings to them. They really appreciated this meal especially after getting home from the hospital that day. My mum made the best beef and barley soup. She put turnips and parsnips in it, along with mixed veggies, and it was amazing. I've tried and tried to recreate her soup but so far I'm falling short. It's good, but not my mum's. I'll keep trying. 😊❤
1. Looks delicious! 2. Hulled barley is the whole grain version if you were looking to ditch refined grains. 3. Uncle Roger would add msg. 😎 4. Worcestershire sauce has vinegar and anchovies. The vinegar would be good to add (like you mentioned) and anchovies go well with tomatoes. It would be the perfect thing to add during cooking or as that last little bit of extra flavor in your bowl. I think I will like this recipe. There are not so many vegetables. The problem with putting every vegetable you can think of in a soup is that every soup then starts to taste like every other soup.
1)non-alcoholic red wine 2)beef broth 3)chicken broth 4)1/2 red wine vinegar and 1/2 water 5)Cranberry juice* 6)Pomegranate juice* 7)Grape juice* Edit: *[real juice not “flavored”]
I'd put tomato paste in the soup before putting in all those tomato chunks but that's just me. Not a fan of tomatoes in soups except for a delicious tomato bisque.
Sometimes it is not worth the extra item to clean for just one thing. I have a tendency to use my hands instead of bench scraper too in this situation.

I use balsamic vinegar instead of red wine. Great depth of flavor and does not take much.
