Great first course, but the foie gras was kept on the griddle far too long. Foie gras does not need that heavy of a "crust". Foie gras requires impeccable timing for the perfect presentation. As soon as the onion had caramelized, he might have put the foie gras on top of the onion to retain heat while not rendering it down to nothing, plus, it would further "season" the onion with it's delicate flavor. Merely a suggestion from a retired fine dining chef who has plated many a foie gras appetizer.
Honestly it just kills me when they serve an otherwise good menu and then short change it with cheap garlic fried rice instead of a proper fried rice. Just tells me they want to save $1 when the customer has spent so much. This is the last dish of the service and instead of making a lasting impression they choose to be cheap. Not impressed. Btw fois grouse is just inhumane!!!
