THANK YOU. I made it for the first time just now for gramma, who hasn't been able to in years and it was her favorite thing her mom made. I can't wait to show her.
I have tried Divinity from numerous sources and have yet to find any like my Mothers’. It was incredibly light and delicate. I remember our kitchen counters filled with Divinity in white, pale green and pale pink. I cracked walnuts and placed a perfect half on each piece of candy. All the women in our family were great cooks and our tables were always set beautifully…and we weren’t rich.
I made divinity by hand with my mom growing up. She whipped the egg whites a while then I did. When syrup reached right temperature I stirred while she poured once all syrup in she stir until started setting then we both spooned like you did. Clean up of the bowl was easy…my brothers and I would sop the bowl almost completely clean then wash in hot water. My brothers(both older than me) helped with stirring the different types of fudges. So we all learned how to do Christmas candies as children. Can’t make candy anymore because of arthritis but still make cookies, cakes, and pies.
The first golden rule of divinity is to prewash all your utensils, cookware and mixing bowl in hot soapy water (use a clean dish rag). One tiny spot of grease can make your candy fail to set up. I’ve been making and selling my divinity for almost fifty years. A Taylor candy thermometer is the best and is easiest to attach to your boiler and is not expensive.
I remember my grandmother making divinity. It was the highlight of the Christmas season. I sat on the kitchen floor that was covered with a quilt. My brother held the big metal bowl as I stirred the divinity like a witch stirring a caldron. There were no stand mixers, but the candy thermometer was essential. Thank you for making this video so that I can start making divinity again. Greatly appreciate the hints and tips.
What beautiful memories! I find it amazing how our woman of old made this recipe without a mixer. It was definitely a group effort! Thank you for sharing and I hope you try this❤️
Mom made divinity without air conditioner, no thermometer..As soon as any kitchen appliance came out, Dad would go out and buy whatever it was...Mom was a fantastic cook and baker, who gave demonstrations for women who wanted to advance their skills.
I've heard with candy sometimes if you cook it like a few degrees above the recommended temperature that can help when it's humid out. I don't remember exactly how far above the particular stage it needs to be but it is a trick I find that works for most candies.
I just made this candy today. It’s my husband’s favorite candy! I am unsure why your video showed up in my UA-cam feed, but I’m glad it did. The tip for using the second pot of water to help with spooning out the candy is wonderful. Thank you so much!
I really enjoyed how reassuring you are. My mom is a great baker, but Divinity was the one thing that scared her and the one thing she sometimes failed at. So I've never tried it.... cause if my mom couldn't.....But I think I will now. Thanks so much for the lovely video.
I have always been afraid to attempt making divinity as I’ve heard it wasn’t easy to make. Thank you so much for your video. I am definitely going to make it this Christmas ❣️ I can’t believe I’m finally making this for the first time at age 63.
You are so lovely and gracious and I thank you for sharing your recipe and technique. My mom used to make divinity at Christmas when I was growing up but with a hand mixer. I didn’t realize how hard it was to make. This video was bitter sweet to watch. I left home for the military after high school, moved far away and rarely saw her after that. Unfortunately little did we know she would be diagnosed with early onset Alzheimer’s and pass away a few years later. I had completely forgotten divinity until I stumbled across your video. I remembered the sweet smell and taste as you were spooning it out. I don’t have a stand mixer but if my mom could make it with a hand mixer I’m willing to give it a shot.
My grandmother said no matter what don't double the recipe....do one batch at at time. Did I listen the first time? No so I had to put it in the freezer just to get it to make a taffy like consistency. Now I do ONE BATCH AT A TIME!
This is the BEST video I've watched on making Divinity! Thanks for all the wonderful tips and this was a great tutorial! Thank you so much! Oh, I was so impressed with your tutorial that I became a new subscriber!
Welcome to my channel! Yay! I just made another Divinity video yesterday that I will upload next week. It's the same information as the last, but better filming quality. I've learned a bit along the way ❤️
My mother used to add food coloring and other flavorings besides just vanilla. She always made a box full for my grandfather for Christmas. One of my favorite candies as a child..
You are so lovely. I appreciate the tip using the Sharpie mark on the thermometer. I did the same on the fill-line of my electric kettle at work 😊I’ve always loved this candy, most candy! You’re a wonderful teacher. Not only the how but the why. I will have this video at the ready when I attempt it.
I make divinity for the grandkids and I tell them it’s snowman ⛄️ poop and the love it and I have also used food colorings and they are absolutely beautiful on a Christmas Family table
Thank you for making room for us and sharing your talent‼‼😁 I have beautiful memories of making divinity with my mom❣❣🥰🥰 We made white with walnuts, green with pecans and plain pink.😁

Thank you for sharing! You made this look so easy! I'll try it in the morning and see if I can finally make some. My husband bought me a stand mixer just so I could be able to make some. I hope mine turns out looking like yours! Fingers Crossed!
Thank you so much for your video, I feel like I can make divinity using your tips, plus you have the same mixer I do, and using the other paddle is a great tip.
Found your channel today. Enjoyed watching a few of your recipe videos. Thank you for sharing and making it look so easy. I will definitely be trying to make divinity now. I do have a question; if anyone has an answer for me. Previously, when I was much younger, I had some divinity that had dried cherries or cranberries as well as pecans. Am I just dreaming or is that something I could add?
Hi! Welcome to my channel! Yes!! You can definitely add dried cherries to your Divinity. Just add them at the end and stir them in. And, almond extract is excellent with the cherries❤️
@@kathyssouthernkitchen302 thank you Kathy! Another question, does the humidity effect the outcome of the divinity? It’s been rainy and cold here so I haven’t tried yet.
I find testing the boiling sugar just put in a bit of water feel with figures if Crack stage be hard or threads when picking g up boiling sugar threads off spoon is Crack stage

@@kathyssouthernkitchen302 ok thank you so much! I have the same mixer as you so I will stick with one batch at a time. Merry Christmas and thank you for making this video! You made divinity seem much more doable. 🎄🩷🤶🏻
There's two types of dried egg whites is the meringue powder with Charity has sugar in it and then there's just plain dried egg whites if I haven't seen on any store shelves in a long time. Both will whip up just like fresh egg whites.
I attempted your recipe, while I had success with getting my egg whites to get to stiff peaks, I failed in the end result. It ended up as a sticky taffy mess. Not sure what I did wrong. 🤦🏼♀️🥴😞
Don't give up. I've had that happen as well. It sounds like it didn't spend enough time in the mixer. Don't stop mixing until the Divinity holds its shape. It takes anywhere from 5 to 10 minutes and sometimes longer. Give it another try. It's so worth it!!!

Thank you. UA-cam will not allow me to upload the recipe. I've included the recipe at the end of the video. Hopefully you can pause it and screenshot it. I'm so sorry l can't do it.
Could you put the candy in a pastry bag & drop out on parchment? It seems it would make the process much faster. Or is it too sticky??
It's too sticky. It dries really fast. And, the little bit of water you get from dipping the spoons helps so much❤️
Can divinity be frozen?
How much corn syrup? It looks like a half a cup, but that's just my guess.
You're right! 1/2 cup. The recipe is at the end of the video. You can pause it and screen shot it. Enjoy!!!

Ok, but what if you don’t have a candy thermometer? Can u just eyeball it?
I strongly recommend a candy thermometer. You can definitely make it without it, but it would be really difficult to it right.
Do you use whole pecans or pieces?
I use pieces and then whole at the end❤️
I found in the recipe it was chopped
I didn't hear how much corn syrup?
1/2 Cup
Can you use pasteurized egg whites?
Yes mam. Your syrup will cook your egg whites though❤️
Also pasteurized egg whites to take longer to whip into Peaks.
Yes you can
How much syrup did you use
1/2 cup
The recipe is at the end. Gee whiz!
This is a very old video. I've learned a few things along the way❤️
I was going to make this but I don't have any Karo syrup or vanilla extract. It looks amazing and I haven't had any in years.
How much corn syrup?
1/2 cup
Can you use coconut sugar?
I honestly have no idea. I've never made them with anything other than Granulated can sugar. If you try it, let us know how it turns out. Blessings 🥰
How much syrup
1/2 cup
Do I have to add nuts?
No mam. You sure don't.
Amount of corn syrup???
1/2 cup
