A video early into development of The Simpsons: Hit & Run. It features footage which contains several changes from the final game. This was shown at E3 2003.
Here are things I noticed: 1. The sounds on the car doors closing. 2. The obliteration car from level 5 is in level 1. 3. The double jump and the vent jump sound is different. 4. The wasp cameras are brighter. 5. When Bart goes into the observatory, it's the sunset just like level 3. 6. You can kick off the head in level 2 which you can't do in the final game. 7. Bart isn't in the logo.
And let's not forget that in the E3 Beta Footage, The cars do not realign themselves when they jump. (A good example is at the Sit-N-Rotate in Level 2 at the 0:55 mark.) While not possible on Console Releases, it is possible to reimplement them in the PC version with the help of the Mod Launcher.

Snake is driving Bart in level 2. Unless this was an oversight in the final game then I don’t think this occurs.

The demo reel of the final game used pretty much this footage and dumped the game’s official audio into it (voice lines included).
