      The square dish is called a trencher. In medieval times rich people used to put a slice of bread under their food to sop up the juices, then feed it to the poor as an act of charity.

    Here's a bit a trivia: the Caesar Salad isn't Italian, let alone Roman. It was created by Caesar Cardini, a restaurateur who had restaurants in San Diego and Tijuana, and a hotel in Tijuana. Although it dates to the 1920s, it did not become widely known until 1945, when a writer for the New York Times introduced it to New Yorkers.

    Wow! Already had created the same salad with exactly same dressing seven years ago with one major difference: without peacon nuts (sugar was added to the dressing) and I only used slices of green apples no red ones. The rest pretty much the same. Once or twice I added sticks of wild cucumber and once I added slices green tomatos..both additions were amazing and unique!

    My first mind-blowing salad was a nicoise served at an elementary school camp in San Francisco. It was truly shocking salad could be so good. I'm sure Brutus will not disappoint.

    Tried it. It's good. Maybe not caesar salad replacement good. But good. (I used candied pecans, which complemented the sharp dressing nicely).

    Another Home Run Chef John! Was a total hit paired with your Gazpacho and a light curried chicken salad, perfect! And the dressing kept the apples from browning, the leftovers were delicious the next day for lunch.

    Chef, as an Englishman I have a sharp ear for pronunciation. You have ALWAYS got it right in past videos. For those that are wondering, despite the spelling, it is ' Wooster shear'. We usually call it just 'Wooster'. Love your channel. I used it on my bid to loose weight and eat healthier. I am eating healthier... and I put on three stones. :-) (by the way, the 'oo' is fairly short. It isn't 'Woooooster' More like the beginning of the word 'would'. Without the 'ld'. Would have been much easier to call it Essex sauce but, there you go).

      That is first world problems for you. Here in Cologne/Germany it is so brutally hot I can't bring myself to leave the house for salad and apples. So I either have to drink the dressing or fire up the stove for some nice stir fry.
      In case you don't know a/c isn't common in apartments or houses here and public transportation don't really have it either. It would make sense anyhow, since the doors open and close every 3 minutes anyway.

      CologneCarter yeah I hear ya. Our apartment has no AC, so if I want to fire up the stove, it's a terrible idea. Salads are a way of life past mid June.

    we do something similar, we don't use whole walnuts nor sweetened, but we do add dried cranberries and raisins... YUM... I am going to try this dressing on our salad.

    Hey Chef John,
    Try this salad with some steamed or sautéed golden beets for the soft texture and sweet notes as well as some bacon bits for a salty smokey flavor. It really takes this salad up to a whole new level. It's one of my all time favorite salads.

    Man I'm not one for fruit in salads, but this looks reallllly yummy. I bet some dried cranberries and goat cheese instead of cheddar would also be good. If you mixed the fresh tarragon and dill into the dressing, reckon how many days it would keep?? 🤔

    Made this for lunch. Awesome salad. Coudln't find any hot Dijion at grocery store though so the hotness isn't there but still very good. Haven't tasted a salad quite like this. The cheese and mustard interacting with the dill and tarragon is a unique and great flavor.

      elTorpedo But why not, surely the combination of the sharp/sweet Granny Smith apples alongside the sharpness of the vinegar within the dressing can contrast well with the saltiness of the Parmesan cheese which helps to contribute a slight nuttiness that compliments the toasted pecans.

      Gregory Shilov No, no. Cheddar really is the best to go with the apple. The sharpness is just perfect with it, and would just not be as satisfying if substituted.

      I don't understand the issue of not pairing apples with Parmesan cheese as the concept of pairing fruit with cheese is understood to work well. So therefore, the combo of Parmesan and apple should go well together.

    Hi Chef. I changed this up a little and added some fresh garlic to the dressing along with about a tablespoon of capers with a little juice but left out the salt. It was awesome. I also added some sliced avocado just because I like avocado. Thanks for the recipe.

      Right? Who knew? And WHY??? Why does regular ole Cheerios have sugar in them? Sure doesn't TASTE like they have sugar! And if something doesn't have sugar, it probably has HFCS!!! It can take HOURS for a few groceries at the store if you read labels, huh?

      selima rahman No we don't. The sauce name is pronounced Wooster sauce. County is pronounced as you said. It's silly but it is what we do with words here.

    This sounds a lot like a waldorf, with just a different dressing, but for the summer, a lighter dressing is nice. I will give this a try, thanks Chef.
