Wow! Already had created the same salad with exactly same dressing seven years ago with one major difference: without peacon nuts (sugar was added to the dressing) and I only used slices of green apples no red ones. The rest pretty much the same. Once or twice I added sticks of wild cucumber and once I added slices green tomatos..both additions were amazing and unique!

That is first world problems for you. Here in Cologne/Germany it is so brutally hot I can't bring myself to leave the house for salad and apples. So I either have to drink the dressing or fire up the stove for some nice stir fry. In case you don't know a/c isn't common in apartments or houses here and public transportation don't really have it either. It would make sense anyhow, since the doors open and close every 3 minutes anyway.
CologneCarter yeah I hear ya. Our apartment has no AC, so if I want to fire up the stove, it's a terrible idea. Salads are a way of life past mid June.

we do something similar, we don't use whole walnuts nor sweetened, but we do add dried cranberries and raisins... YUM... I am going to try this dressing on our salad.
Hey Chef John, Try this salad with some steamed or sautéed golden beets for the soft texture and sweet notes as well as some bacon bits for a salty smokey flavor. It really takes this salad up to a whole new level. It's one of my all time favorite salads. :) :)

Made this for lunch. Awesome salad. Coudln't find any hot Dijion at grocery store though so the hotness isn't there but still very good. Haven't tasted a salad quite like this. The cheese and mustard interacting with the dill and tarragon is a unique and great flavor.

Gregory Shilov No, no. Cheddar really is the best to go with the apple. The sharpness is just perfect with it, and would just not be as satisfying if substituted.
I don't understand the issue of not pairing apples with Parmesan cheese as the concept of pairing fruit with cheese is understood to work well. So therefore, the combo of Parmesan and apple should go well together.

Hi Chef. I changed this up a little and added some fresh garlic to the dressing along with about a tablespoon of capers with a little juice but left out the salt. It was awesome. I also added some sliced avocado just because I like avocado. Thanks for the recipe.

Tried it. It's good. Maybe not caesar salad replacement good. But good. (I used candied pecans, which complemented the sharp dressing nicely).

Just tried the Brutus Salad , thoroughly enjoyed it , we loved the combination of all the flavours just works superbly .
btw best mustard ever, and of course perfect for this dressing, is Maille Dijon!
