  • Air Fryer Cauliflower Loaded Fries with Greek Yogurt Ranch Dressing
    Prep Time: 15 minutes
    Cook Time: 15 minutes
    Total Time: 30 minutes
    2-4 servings
    Ingredients
    • Cauliflower, small sized head
    • 2 tablespoons olive oil
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon pepper
    • 4 ounces sharp cheddar, grated
    • 1/2 cup plain Greek yogurt
    • 3 tablespoons milk
    • 1 tablespoon lemon juice
    • 1/2 teaspoon dried dill
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon onion powder
    • 1/4 teaspoon kosher salt
    • 4 slices cooked bacon, chopped
    • 1 large tomato, chopped
    • 1/4 cup chopped red onion
    • 2 tablespoons sliced chives
    • 1 jalapeño, sliced
    Instructions
    Step 1:
Preheat air fryer to 400 degrees. Line a small baking sheet with foil.
    Step 2:
Cut the cauliflower into bite-sized florets, approximately 6 cups, and place on the prepared
baking sheet. Drizzle with olive oil, sprinkle with salt and pepper and toss to coat. Air fry until
slightly charred and just tender, 12-14 minutes, stirring half way through cook time. Top with
grated cheddar and return to the air fryer until the cheese is melted, 1-2 minutes.
    Step 3:
Meanwhile, make the ranch dressing. Whisk together the Greek yogurt, milk, lemon juice,
spices and salt in a medium bowl and set aside.
    Step 4:
Remove from the cauliflower from the air fryer and top with bacon, tomatoes, red onion, chives
and jalapeños. Drizzle with the Greek yogurt ranch dressing and serve immediately with the
    remaining dressing on the side.

Absolutely Brilliant...great presentation. I'm always looking for unique recipes to add to my menu. This one is great! Whether using Olive oil or Avocado oil...the amount is so insignificant that it is doubtful your body would notice the difference. However, if you're worried, the solution is simple: after the cauliflower pieces are roasted, turn your heat down to 350 degrees, then add the other ingredients...Olive oil, etc. You don't need a Degree to cook smarter... Bottom line...This is healthy. Thank you for sharing...love the music, too.

Keep in mind that olive oil has a 374-405 degree smoke point.. extra virgin is 374.. the health benefits degrade when heated above this temperature because the EVOO oxidizes and becomes toxic. It's better to use avocado oil (520 smoke point) and use EVOO for lightly cooked foods or just on salads.
