Roasted Chickpeas: Indian Inspired and Freeze Dried

  • I try a brand new recipe roasting chickpeas before freeze drying them. Mostly successful, but wonder if I would have roasted with the spices, or if I used a little more oil if I would have been happier with the outcome.

    If you want more flavor in the bean, you can try what I do. Any time I make anything bean wise where I want them to be flavored (Chili, stews, Chana,etc.), I cook dry beans myself, and I use the spices in my cooking liquid including a little salt (I know salting beans as they cook makes them tough, but It doesn't unless you fully season them before they're soft. Ask any country cook who uses a piece of salt pork in their beans as they cook. NOT fully seasoned just a bit or they'll come out tasting flat.) When you cook in the spice the beans adsorb some of that flavor all the way through. Plus they're much cheaper.
    Also, season the peas or beans with more seasoning mix BEFORE they go in the oven. In Indian cooking it's a common practice to toast your spices before adding to a recipe. This is done because dry heating them helps release the oils in the spices (the oils are where those flavor compounds live). The dry heat of the oven does the same as you're really just toasting them in the oven. Secondly, adding the spices before roasting helps them stick to the peas better. The oil on the peas becomes slightly tacky (unless you use too much oil in which case we're just deep frying chick peas which is a whole other but, very delicious recipe) as the oil cools it becomes less tacky so as you toss therefore less seasoning sticks once out of the , plus as the peas cook and give up moisture. This moisture also carries some starches with it which also sticks to the peas as it cools (think paper mache) and helps hold the spice. Of course then to the freezer and freeze dryer.
    I've used this process to do chick peas (Indian style), pintos (Mexican style), and even butter beans (jerk seasoning).

    Hey, I'm curious why you baked them in the oven before freeze drying? Is this essential?

      I was following a recipe for roasted chickpeas…can probably do without roasting, flavor profile may be different though.
