    the art of phrasing has helped me so much since i saw an interview of i think BB KIng, where he said in music, it's about "making a statement". that got me thinking of music as a language, as you mention. the artist is "speaking" with the audience. pauses allow not only the player to rest or prepare for the next line, but the audience gets to appreciate what was just played.
    our phrases may not need to be as exaggerated as a news anchor, but probably shouldn't be like a Microsoft text to speech robot either.
    phrasing also plays a great part in crafting melodies for different sections, as the verse normally says something different than the chorus, etc.
