This room inside of LeChuck's Fortress was cut from the game before the final background art was created, but a skeleton version using a pencil sketch survives in the source code. While there is no functional code for this, analysis of the SCUMM script suggests that a puzzle here involved making recipes by spelling out words using the first letters of the ingredients on the shelves.
Code restored by Marius Winter, gameplay video by Jake Rodkin, MT-32 audio recording by Roger Holten.

Wow that's cool insight on how those fine backgrounds were made. I'd love to know how was the coloring process

The final backgrounds were hand painted using a combination of watercolor, markers, and occasionally gouache, then scanned in and cleaned up. It looks like this room was being prototyped with just the underlying pencil sketch scanned in. It would have eventually been replaced with new scan of a painting, drawn over the same rough pencil lines so it lined up.

I wonder what was the aim of that puzzle, I'd like to imagine Guybrush must to mix ingredientes ala MI1 part 2 in order to get Dinky Island instead Monkey Island, somehow accidentally something went "wrong" and cause an explosion into the fortress

I’m surprised to this part complete but no colors are added.

Because the rooms were all drawn by hand on paper and scanned first and were redrawn in Photoshop later when it was clear that they would make it into the final game. Otherwise you would just waste time on content just to have it cut again.

@@herr_crustovsky in an interview with Ron Gilbert I saw a few days ago (the interview is already older) he mentioned that the graphics were drawn by hand, scanned and retouched in Photoshop 1.
Edit: I found it. Here at 4:31:20: ua-cam.com/video/ikaqus5_QIg/v-deo.html

It was (the first one atleast) done in a software called Deluxe Paint, It was a popular software on the Commodore Amiga, when you saved, you could save it in an .brush file. and that's how guybrush got his name Guy.Brush.
