    Dillan little trick for next time is to add some apple cider vinegar like 1tsp to your milk and let it sit to curdle to mimic buttermilk. It makes the crumb and structure of a dough like biscuit . Also i add one tablespoon of pickle jalapeño brine. Weird but good. Let me know what you think. Happy cooking ☺️

    masa harina is a type of flour made from dried corn kernels that are cooked and soaked in a lime solution to make hominy. The lime makes it more digestible and nutritious and releases niacin, allowing the proteins to be digested. Without this process eating plain corn can result in protein and niacin deficiency which is why many cultures eat protein rich beans along with corn. Btw any supermarket carries both white and yellow cornmeal, neither of which are hominy.

      whats lime got to do with eating protein rich beans along with corn lol. You can live on corn without beans it has plenty of protein. You can live off potatoes, 2500 calories of potatoes have 50grams of protein which is according to hardvard enough for avg human.

      @@inspectahdeck2642 In theory you can. The protein is in the corn but can you digest it? Michael was right. Look into "Pellagra" or "The Pellagra Belt". Fascinating story of people who were living mostly off corn but couldn't digest the niacin.
      I watched a video about how the USA and Italy handled the same problem differently. Fascinating story.

    Dillion & Rebs love the sos free cornbread recipe...I am Paint clan of the Cherokees and Paint clan historically was called Sweet Tassel.. or corn, cefice to say...I love, eat, collect all corn things & make cornbread often till I transformed into veganism/ whole food plant based have not been able to eat cornbread for 5 1/2 years - thank you for this great addition sos free yummy I will be making this soon, Rebs listened to the pod cast you did a bit back w/ Bryan from Krocks in the kitchen, it was nice.
    Dillion loved the chili & cornbread combo.

    I LOVE cornbread! I use 1/2 cornmeal and 1/2 whole wheat flour. I love the delicious nutty flavor. I only use 1/4 cup of applesauce though. I have some masa in the pantry and look forward to giving your version a try.

    Random idea, if you don't use much apple sauce but do generally have apples on hand a skinned cored apple in a highspeed blender becomes apple sauce really quick, generally no cooking required but you might need to run through a milk bag and then add back however much liquid you need to get the right thickness

    I tried making the cornbread tonight and the crispy pieces on the outside were great. Next time I will try to spread the mixture as thinly as possible on a piece of parchment paper. I'm thinking of adding more jalapenos, some diced red pepper for color and thinly sliced garlic and green onions on top. Instead of using applesauce, I'm thinking about increasing the oat milk and adding lemon juice or something to make it taste saltier.

    So glad you posted this! I just made a big batch of three-bean chili this week and somehow the corn chips as last-minute inclusions just weren't cutting it. FWIW, I've never liked sweet corn bread so I've copied down the recipe as is. I'll be making mine in a 9x13 dish in my toaster oven so will probably pull it at 5 min less to test (not with my mouth).     I like the idea of using the masa flour with the cornmeal. Thanks for the recipe.
    Also, when food is taken out of the oven it will continue to cook for several minutes. (I almost always leave my baked goods in the oven just a smidge too long 'cause I just can't accept the idea that it will finish cooking on the counter for the last 10-20 minutes. 😁)

    Would it be okay to make the plant milk a buttermilk w the addition of cider vinegar or fresh lemon juice--so that it comes out as a savory Southern-style cornbread? And is there any need for flax egg solution?
    (might just give it a go, take a chance on a new recipe--sure you've made this lots of times) Thank you!

      @@angelhayes5166 Am also from the south (like-minded), always make it w buttermilk-basically for everything!-but works best if you don’t use rice or hemp milk since they don’t have enough proteins to really coagulate (I heard)

      @@angelhayes5166 I heard the blogger point out only rice & hemp as not having enough protein to bubble /coagulate. Will say if you use lemon juice, it needs to be fresh, not bottled

    Am I the only person who is completely baffled by the concept that chili and cornbread are eaten together? I grew up in the south where we ate rice with chili and cornbread was never sweet. I was absolutely confused when I moved out of the south and people thought I was nuts!! Haha That looks like a tasty southwestern cornbread!

    new wyw fan here! Question - this recipe says to use 1 cup of applesauce but the cookbook that came in the ultimate weight loss bundle has this recipe only using 1/2 cup applesauce. Which do you recommend?

      I used a small jalapeño and I thought it wasn’t particularly spicy. My kids ate it and they don’t like spicy food. I may make it without next time for them because they noticed but I only like mildly spicy things and it was fine for me. I think it will depend on how much jalapeño you put in and then each pepper is a slightly different spice level.
