What is Laing?
Laing is a Filipino dish of shredded or whole taro leaves with meat or seafood cooked in thick coconut milk spiced with siling labuyo, tanglad, garlic, shallots, ginger, and shrimp or pork. It is from the Bicol Region, where it is known simply as pinangat.

Disclaimer: This post is not meant to criticize miss nadia's cooking of laing. I respect her version of this dish.
As a bicolano, let me share the knowledge and tips (naks hahaha) shared by my mom in cooking laing that might help you.
1. Pwede nmn po actually fresh na dahon ang gamitin sa laing pero may disadvantage cya. The fresh leaves takes longer to cook and your laing will be watery.. Mas prone sa "kati" ang fresh leaves dahil may dagta rin sa dahon mismo kaya delikado pag hindi naluto ng maigi.Too dry leaves are also not good. Yung tipong sobrang lutong na sa sobrang dry. Mas madami kang gata na gagamitin kpag sobrng tuyo ang dahon at ang worst doon e nadudurog.kumbaga tamang pagkatuyo lang.
2. Sa bicolano version, hindi po ginigisa ang laing. Pinapakuluan lang tlga.
3. Pwede mong haluin ang laing habang niluluto mo basta purong dahon lang ang nilagay mo. pero kapag may halong tangkay, stirring is a big no no.. And laing with tangkay must be cooked longer or else makati sa dila ang result.

Hi Ms. Nadia, this is my 2nd comment in your entire videos: I love to watch you cooking especially your beauty! Anyway, my lola ang lolo are pure Bicolanos, I know that is your version of Laing but in part of bicol, laing is not sauteed, everything is boiled. Sa ganyan karaming dried taro leaves mga 1 1/2 litters of gata then the purong gata ay panghuli po nilalagay. Ganito ang nakikita kong luto ng mga bicolanos, 1) boil the gata on a big and heavy casserole para di matutong, it takes more than 1 hours of cooking. Importante na haluin ng haluin ang gata muna sa umpisa pa lang po para di mamuo ang gata, pag kumulo saka pa lang ilalagay ang bawang , sibuyas, tinadtad na luya or tanglad, pork ( or the delicious dried fish, labahita) then put raw bagoong, salt, shrimps, siling labuyo, and taro leaves. Pag kumulo na saka na hinaan ang apoy and simmer the laing for more than 1 hour or two. Pag luto na saka pa lng ibubuhos sa ibabaw ang kakang gata. Then cook it for another maybe about 5 minutes. Ay, napakasarap ng ganong luto, mas masarap kung sa palayok niluto. Its either labahita and shrimp or pork and shrimp ang sahog. I prefer both. Sana makatulong po kasi my lola’s laing ay most requested pag may party sa office. 😃

I agree that's how it's done traditionally in Bicol. Just talk to born and bred Bicolanos who cook. However, in cooking there is no right or wrong if it's your version.

My mom is from Bicol Region what I remembered was when she cooked laing it took more time to cook and she added the first gata last.

Thank you for this Miss Nadia! I was born and raise in Bicol pero I don't know how to cook laing ...we also call it "Natong" :D Ngayon na wala ako sa Pinas, youtube ang inaasahan ko sa recipes. Bakit mahilig ang ang mga Bicolano sa Gata? Opo agree ako sainyo, dahil sagana po ang niyog sa Bicol ... mahilig rin po sa maanghang kasi kung purong gata, nakakaumay.. Naalala ko ng bata pa ako pag sinabi na "Gulay" ang ulam automatic na may gata ... pag walang gata, Ginisa, ang tawag.. :)

Thanks for this! I would just like to point out the difference between clove and bulb (or head) of garlic. It looks like you used 1 bulb - not clove - of garlic. Cloves are the smaller pieces that make up the bulb.

Bicolanos are known for ginataan dahil napapalibutan po kami ng niyogan. Tama po kayo,Ms. Nadia. And madalas po kami daanan ng bagyo,so maraming laglag na niyog,then mangunguha na lang ng dahon ng gabi sa bakuran,bibili ng balaw/bagoong and sardinas or tuyo,solb na and hapunan...simpleng buhay probinsya po,which I miss... siguro,wala pang P50 pesos gastos namin noon pag niluluto namin yan.
I came from northern part of luzon 300 kms. away from Manila,my good friend of mine is from legaspi she always prepare laing evrytime I visited her❤( all i can say is absolutely yummy happy tummy ang luto nya.)now.. because of her natutunan ko rin magluto ng laing.... 😊

My dad is from Bicol and he told me that there are a lot of coconut trees in Bicol which is why there are a lot of foods cooked with coconut milk. I cook my laing a little different from how you cooked it but I think I will try to add lemongrass next time. I think it might taste a little more like a Thai dish with the lemongrass but I’m curious to see how it will turn out.

I think and I agree with you, Bicolanos are fond of gata and sili because of the natural habitat. Yung minerals na buga ng Mt. Mountain makes the soil ideal for the growth and abundance of coconut trees, sili and gabi. Anothe is, , madali lang cyang i-prepare. Kung nasa paligid mo lang yung mga ingredients mo, you just make kuha and pitas, right?
