    Summary: Koobi is salted tilapia used in most Ghanaian savory dishes such as dips, stews, soups, etc, to attain an umami taste. It is similar in taste to shrimp paste, and fish sauce. Salting and drying are both preservation methods used in the production of koobi and therefore, it stores well in the freezer or at room temperature.
    Ingredients:
    6 medium size tilapia scaled, gutted, fins and gills left intact
    2 pounds coarse sea salt

    Wow! This felt so nostalgic. As a Chinese person, we have similar salted fish in our culture as well and I remember when my mom would make white rice porridge and serve it with the dried, salted fish.

    Thank you so much, l don't like fresh tilapia but you just showed me how to remove the impurities from the fish. Tilapia is a river fish and we must remove the impurities. Infact in my family we were told not to eat it unless really hungry. Thank you my darling daughter.

    Woooow this is amazing.. we use similar methods to salt sardines and other types of fish too. I'm originally from Egypt living in Canada and I didn't know we can also salt tilapia the same old way.. will definitely give it a try ASAP. Thanks a lot for sharing😊👍🏽

    If the fins are removed, would it alter the process?
    Whenever I cook with koobi, I remove the fins, so am thinking, if I should do it at home, I will remove it while it's fresh, since it's easier

    That's good and all in America or Europe. However Africa Market Women are the best authentic makers, tilapia is a relatively cheep fish and shouldn't be so expensive in Liberia or Africa for that matter. Thank you nevertheless.

      It stores well in a burlap bag at room temperature or in ziplock bags in the freezer, you may also keep them on a rack in an open area. I store them in a ziplock bag in my freezer. 🙏🏾😘😘😘

      The gills help with the classic fermented taste of Koobi in the long run. It is absolutely safe to store the used salt in the pantry. No microorganisms that have potential to cause disease will survive in salt. The freezer is an option of storage too.

      It will bake no matter how low the setting… use a dehydrator if u dont have the sun

      Koobi, actually requires the gradual process of fermentation as well as drying or dehydration so the dehydrator will defeat that process of fermentation. It’s best to use the sun. Thank you dear🙏🏾💕

    It's very nice but next time don't cut the fish like that it supposed to be by the side and when the salt is too much the koobi will be tearing thank

      I’ll avoid the dehydrator in this preparation. In the absence of the sun, I recommend rather air drying. Thank you 🙏🏿

      Hello just discovered you, thank you for this!! I can't leave outside because of animals...can I leave it out in the day and bring inside at night? And repeat. If i can, should I leave it inside in a cooler area or warm spot? (I live in a downtown Canadian city) Thank you!
      ...or can I dehydrate in oven?

    Can this be achieved indoors for those of us living in colder wet climates and without much sun - Seattle, using an oven?

      Yes, at room temperature, 80 - 85 Degrees Fahrenheit. Must be kept in a dry environment as well. It will take perhaps 2-3 weeks to cure perfectly this way.
