    Hello, the potato beer is so good, to improve head retention try don't perform the 52 celcius rest. Mash at 67 celsius for 60 min.

    I am chuffed to have witnessed this. My wife left me 12 years ago.. Wednesday 7th it was. 10:47 when I received those divorce papers. I went through a really dark place, my children abandoning me as my cruel ex wife had full custody. I didn't get to see them in 4 years. Those 4 years were the most gruelling of my life. They call me David instead of 'dad' or 'daddy'. I haven't seen those whippersnappers in 4 years. Let that sink in. But this potato beer helps me forget all my problems. They vanish, into the cold cold wind. I have grown to love you like a son, you fit the hole in my heart that was left when Cassanda (Cassie, her fun little nickname 😉) left me. Love ya man. Keep up the great content.

    A good demonstration. I've been brewing beer from potatos for a while now and I'm getting good results with up to 2/3 of the grist being potato.
    Pilsner malt is essential for it has sufficient amounts of amylase. I also recommend skipping the boil and instead just throw the potato through a foodgrinder. The potato does not need boiling to convert, just the surface area (which you may be sacrificing in mashing it boiled).
    Thirdly, the head retention can be improved by adding cara... Uh... Someone mentioned it here below. Anyways.

    I think the protein rest you're making could be destroying the albumin and other proteins that build the foam, I've experienced this problem with homemade barley malt and I don't get it since I ditched the protein rest altogether =D

    Fantastic ideas.
    Maybe you can add up to 10% organic wheat to your boil for 45 mins to get your froth will hold up, and also give you Wit bier type aromas (citric or pineapple).
    Milk sugar (lactose) added in the last 10 minutes could improve the head too.
    Or try honey as the bottle conditioner.

    I would suggest using a combination of an iodine test and constant refractometer (gravity) readings during the mashing in order to find out if you are reaching the target gravity in order to increase the final beer's alcohol content. Cheers!

    You can add the rye malt or cara pils in the grits of malts to improve and mantain the foam.

    i think that if you first use a 20 minutes step, at 50 CElsius, when preparing the must, you may improve your foam. It is not a 100% certainty, because i really don't know the effects of "potatoing" your beer. Grazie mille for your channel!

    A way to increase the foam stability is to add carapils (aka dextrin) malt to your malt bill

    Thanks, I will start with a small amount. How would you recommend giving clarity to the end product? clarity as in transparency.

      There are many ways to increase the clarity of beer, although with this kind of beer it might not be a desired quality. As previously commented if you prolong the bottle conditioning stage that would let the large non water soluble compounds and particulate matter to settle out. Another alternative is to use some sort of kettle addition such as Irish moss or post mash additives which pull the compounds out of solution which contribute to haze and chill haze. Another method would be to lager the beer, which is a prolonged cold storage stage, similar to the prolonged bottle conditioning

    I think the problem with foam was a long time for the protease (30 minutes at 52 C). It should be only 10 minute, or do not stop for protease.

    I'm making this beer today with a few modifications. I will share what I did after I have completed brewing the beer. Been waiting for a day to brew and I decided this was the day since I had all the ingredients.

      Pilsner Malt 700g
      English Brown Malt 40g
      Regular Oatmeal Unmalted 50g
      Unmalted Wheat-I Used Bulger Wheat 60g
      Regular Potato: 350g
      Sweet Potato or Yam: 300-350g
      UK Fuggles 14.5g 60 Minute
      Galena 15 Minutes
      Water 8.5 Liters
      Yeast: U.S. O5
      Do a cereal mash of the unmalted wheat use 1/2 liter. Cook
      Potatoes 30 minutes in 5 liters of water, then mash keep
      Water then add grain at 155F for 90 minute mash. Heat
      remaining 3 liters of water to 168 for sparging. Drain wort,
      then sparge and wait 10 miuntes. Boil for 60 minutes using
      hop schdule above. At 10 minutes at whirlfloch. Place in
      Fermenter pitch yeast above or whatever yeast you prefer.
      Ferment for two weeks, can transfer to secondary in 7 days
      My final Gravity was 1.040
      The beer turned out really good and have made since this batch with a few changes due to the ingredients I had on hand. Wheat was added in an attempt to improve head retention.

    Boiling temperature doesnt have anything to do with it. When heated all it does is that it brings the sugars/ carbs in the used ingredient out into the liquid. Along with that also comes out proteins and other substances. Although its true that over heating could denature certain proteins, in your case all that has happened is the choice of ingredients
    For good, long lasting foam to appear barley and hobs may just be required. This topic is still under discussion.

      I was just about to ask that question with the different temperature settings when I saw your comments. I think it is more so for acquiring certain tastes and colour. Pretty much American style of brewing beers.
