@@BeanSportfishing YOu won't regret it. It's legal where i'm from. Btw, you can leave the skin on if you're into that change in texture, fatty taste. Just ensure to season it with good salt, some oregano and chives crushed up into a paste with a little vinegar. Just season lightly with that mix, then pan sear with the garlic and culantro in real butter. when it's done, put a little lime wedge... you're gonna LOVE and i mean LOVE it! just please don't over cook.
Yeah, in Florida these are known as Goliath groupers and they do get much much bigger, however the ones we were targeting have to be within a certain size limit, so we needed the smaller ones for the tag.
