I'd love to do this. Unfortunately, the only good area I have to put them in the ground is a utility easement. The utility companies are bad about damage in the name of keeping things clear. Does this method do well in containers?
I am sure you could, but I don’t think there would be an advantage because containers require heavy pruning. They would probably consume the same amount of space, so it wouldn’t be worth the practical effort unless you wanted a specific aesthetic design.

You can just do what millennial gardener did in the video train the lateral branches along the steel wire and cut off the central leader at or below the fence line.
Jesus dude I'd love to see how you go about your daily life avoiding everything that could potentially be harmful in large doses. I guess you grow ALL of your food, make your own earthy soap and toothpaste and sew your clothes from the hemp plants you grow in your homemade compost.
That's a false internet myth that hasn't been true in 30 years. Modern copper pressure treating is completely harmless, and people that spread that myth today are living 30 years ago when people used arsenic treatment. Of course, that's been banned for decades in residential lumber.
I did that and the squirls love the varieties. They use the fence as a freeway to get to the best tree.

I live in central Florida and have 6 espalier trees. 2 fig, 2 peach, and 2 mango. It works very well

Very nice. Cross pollination is needed for some fruit trees. Cherry and apricot come to mind.
