I watched this video at 12pm, cancelled the rest of my day, went shopping for ingredients, started cooking about 3pm, now I'm typing this while laying down. It was so good. Couldn't get Gruyére so used Comte, and I roasted an entire bulb of garlic until it was a sweet purée and added that to the onion. It was sooooo good!! Thank you. The whole bulb of roasted garlic means I now need to cancel tomorrow, too, but hey, I'm okay with that!

In my opinion, there are very few scents in the world that top butter, olive oil, and onions sautéing together. I would wear it as a cologne if someone made it 😆! Thanks for all the good vibes! 🤙🏽

Ok Joel, for the last 16 months I have eaten no pasta, no processed food, no wheat products at all, no sugar, etc... I eat foods with one ingredient (e.g. meat, fresh organic veggies, nuts, etc). And as a result I have lost 55 lbs and feel 25 years younger (I'm 58 yrs old). Back in the gym after a 20-year layoff and now bench pressing more than I weigh (215 lbs). I feel AMAZING! For the past 20+ years my problem was a very poor diet and WAY too much of it! But now I'm beginning the see that moderation is key. Overeating is the problem. This dish, and all of your recipes, are full of fresh ingredients and so when I'm ready to begin eating this way again in the near future, I'm going to practice moderation. So, when is your cook book coming out? I will be one of the first to purchase it! Happy New Year, Chef!
Hi, so I am on the same kind of diet for years now… for a reference, I’m 5”3’ 120lb, and I’m 50 yo. For this recipe you can use a one ingredient organic brown rice pasta, which you can find in any grocery store now (I get it in WF). For cheese, I would suggest a sheep pecorino cheese(it’s a sister to Parmesan cheese), and instead of butter, you can use extra virgin olive oil from one origin (I prefer Italian evoo but Californian is also fine). Best of luck with your diet, it doesn’t have to be boring, it can be so much fun and still super healthy ❤

I'm glad the recipe inspires you to practice moderation, I think that's key! 😊 I personally never diet (as in to lose weight), I eat everything but 80% of my diet is healthy well balanced food, smaller meals. I never go to Doctors, I'm never sick, never catch colds more than half a day. Never had Covid. I do daily breathwork, exercise and cold showers even in Winter. You should do the same once you reach your goal. I'm impressed with your bench press! I used to bench press around that when I was in my 20's! and you're doing it now at nearly 60, wow! I still do push ups and squats everyday. Cook book is hard to do while still making recipes, but hoping for Christmas, I have 100 recipes finished, now the photos. Keep up the good work BB!

Omg! This was so good! I made it with angel hair pasta and ate it for a week! It was so rich, a little goes a long way. Absolutely delicious! Didn’t know if I’d like it being just pasta and onions. Thought maybe it needed some mushrooms or sun dried tomatoes. But I was so wrong. The onions added just enough sweetness with the garlic and pasta. It was heavenly. Even heated up in the microwave! Bravo!

WOW, That looks amazing! I will save this recipe for sure. Your little pup watching you cook was adorable. I remember when I was doing some cooking demonstrations at the Farmer's Market, my job was to make people hungry (and share a recipe of course) - get them to shop for produce and other food products to take home and cook. Sometimes if I finished my cooking demo too early, I would just cut up a couple more onions and just cook onions to send the aroma all over the market and EVERYONE remarked how good it smelled! It was just onions! For anyone who wanted to add meat? some shredded braised short rib meat, or some shredded braised chicken cooked only with salt pepper and garlic. That would be awesome in this dish.
The braised meat would matty well. The smell of onions is truly intoxicating, best way to attract a crowd at any cooking stall!

This felt like a dance as I was watching it. I love making French onion soup, and felt I could anticipate many of the next steps, and then surprise with some different techniques, and ingredients was wonderful. I will have to try this with some slight variations. I want to cook those onions twice as long to get that deep dark caramel color and build that fond. Then before adding the herbs deglaze a bit with sherry wine first, then add a tsp of balsamic vinegar to add some acidity. Outside of that I wouldn't change a thing. Looking forward to trying this.
