Hey Oliv, I tend to freeze those Os a Moelle so Kenji takes longer to eat them. He also eats the whole bone after a few days!

Unless you're a vegetarian or vegan, I have no idea why anyone would prefer this to a classic meat-based ragù. Classic ragù is so immensely flavorful. Mushrooms are great, but they are not meat. Rather, they are a meat substitute. I think that may be what Chef Joel was after, and that's fine with me.

I'll never understand why people peel their carrots for a dish like this. It's a waste of food and nutrition (unless you use the peel for a stock). Mind you, the dish looks great!
If I grow my own, I never peel them, just scrub them real well. but commercial carrots are sprayed and I don't want those chemicals in my meals. That's the main reason.
