This was above and beyond my expectations! This cake is on par with a specialty bakery wedding cake I had over 20 years ago. I no longer have to wish I had that recipe
anymore because this recipe exceeds it. The only thing I did differently was add a middle layer of keto strawberry mousse. Who doesn't love a layer of mousse, as in Costco cake? I believe the Holy Spirit is giving you supernatural wisdom to come up with these recipes. Not denying how much hard work you also put into research. My husband also likes watching your videos. I made this tonight with the lower-carb version of your Einkorn flour. I couldn’t find my 2nd cake pan so I made a Bundt cake and 6 cupcakes with one recipe of batter. IT’S AMAZING. I couldn’t wait til the cupcakes cooled so I had one still hot out of the oven. Divine. Beautiful crumb, not greasy like a lot of keto cakes. No weird sweetener aftertaste like a keto box mix. I’m gobsmacked by how good this is, even without frosting! THANK YOU VICTORIA!
I baked this cake for the 4th of July (sheet cake) and put berries on it for a flag design. It looked beautiful and tasted delicious. I wish I could send a picture! My husband loved it too!

Wow! What is this crazy magic? I just made cupcakes from this recipe for my own birthday. I only made half the amount because I've been disappointed before on keto cake recipes. I should have made the whole recipe. I made them last night. I got 12 cupcakes and a mini cake pan worth of cake. So about 14 cupcakes. It's been less then 24 hours and my non-keto family wolfed almost all of them down. They look, taste, feel and smell like wheat flour cupcakes. The crumb is AMAZING-delicate and fluffy like a cupcake should be. Moist, but not soggy. The butter cream frosting was very good as well, but I prefer the cake own it's own, so I made the frosting and put it in a container in the fridge in case anyone wants a frosted cup cake. So far the pancakes, biscuits, birthday cake, waffles, maple syrup, honey, and ice cream have been indistinguishable from the real deal. This is the first time I've been able to stay on keto for more than 3 days. I'm going on 3 weeks now.
hint: if the allulose is not sweet enough, I add a bit of my own erythritol/monk fruit mixture to bump up the sweetness to suit my taste.
Wow, you are that girl! Just when keto was getting boring and other keto recipes were crap. I can be a baker again! Thank You! The bamboo perfected flour is perfect when incorporated into my regular recipes. Myself and my family ( not keto) love them!!

Ok coming back to let you know, I made this with the bamboo fiber and it was amazing! My picky husband who does most of the cooking was so surprised. I didn’t use the sprinkles but they weren’t missed. Wonderful recipe. Thanks again.

I can’t remember what I did, but it’s in the video. Victoria either used the flour at 84 grams per cup or just measured it with a measuring cup. I usually go by the grams.
OMG! I made cupcakes and they were perfect. They were moist and the texture was light and crumbly. I halved the recipe and used coconut oil for the oil and NSKF 2.0 (measured with measuring cups). Baked at 350 deg for 25 minutes, with aluminum foil over them for the last 5 minutes. I also used half bocasweet and Lacanto which I powdered in a coffee grinder.
It's good to know that even with such tiny amounts of sugar from the sprinkles, the allulose makes it less likely that the sugar will have much of an effect

I made your cake for my mom’s birthday. I didn’t like the cake batter flavor but I did use a different brand (ooo flavor). Texture was moist and delicious. It just melted in my mouth. I think next time I will use vanilla or perhaps almond extract. I’ll also add a thin layer of your strawberry jelly in the middle. I’m also thinking I’ll try to use it to make a triffle. Thank you for all you do. I had given up on cakes, cookies, and breads after way too many keto baking fails.

Your keto baking recipes have some of the best that I've tried! I will be trying this recipe soon. The McCormick cake batter extract has propylene glycol, which has carbs. It appears there are approximately 11 carbs in 2T. That will only add about one more carb per cake slice but thought you'd want to know! Thanks again for all you do.

Usually I make myself pretend the baked goods are delicious, when in fact I'm miserable denying myself tasty food. I might actually try a Keto lifestyle rather than just lower carb!
