Can the average person tell the difference between 7 million color screens and 1 billion color screens? It sounds like a cool feature but I am curious how that actually affects the viewing experience. Are the screens more vibrant/colorful? I haven’t seen any of the phones that do this in person
Probably with the right setup yes. Native 8-bit content mastered properly is pretty good too though, which is what most of the world is presented with in displays. Like someone else replied to you though, it's HDR content where you get to see better the importance of more colour depth (10-bit vs 8-bit). When colour gamuts get expanded and dynamic range (colour volume) gets increased, the importance of more steps of transition between colours comes into play in order to avoid banding. With standard dynamic range content (SDR), you're not likely to notice the benefits of 10-bit over 8-bit. With HDR content, 10-bit becomes a must over 8-bit.
Similar thing goes for higher refresh rate. Even though it feels really smooth it has no advantage on gaming (high refresh rate monitor makes a difference but not on smartphones)

Faster, snappier response, less input lag, smoother, clearer motion visuals - these are all huge benefits of higher refresh and you can perceive them just as much on phones as you can on monitors and tv's/
