They didn't develop shit, the recipe for tamales and enchiladas varies but they aren't brand new innovations. The versions they came up with are purely 'bleh' compared to authentic Mexican food.

Baking powder doesn't mean "levadura en polvo", it means "polvo para hornear". The "levadura en polvo" is yeast, and baking powder is "polvo para hornear". You have to check your translations. 4. Los Huevos Rancheros aren't like that. The true Huevos Rancheros are Fried corn tortilla, with refried beans, a sunny side up egg, and a Ranchera sauce. 5. The "Crispy Potato Tacos" in Mexico are knowed as "Quesadillas de papa". The recipe is very good. 6. Fajita Bombs I don't know where did you took the idea; anyway I think It's great. 7. The Shrim Tostada is GREAT! That's really Mexican. Loved it! Finally, I'm just writing this because I neded it. I love Mexican food. In fact, I'm Mexican. I wanted to say you this, because there are some recipes that aren't fine, or they aren't as I know them. Congratulations for making them, for making people from other countries can cook our food. (To me it taste like it's not cooked even though it is) Also the flour tortillas and shredded cheese for a quesadilla is also so wierd to me. I saw them for the first time in high school from a friend who's not Hispanic. I always grew up eating them with corn tortillas and Chihuahua cheese and green salsa on the side. I liked the flour and shredded cheese quesadillas so much I ate them almost every day after school after that but not common in my family. I only had flour tortillas warmed and with salted butter. 😋
For the potato tacos add cooked chorizo mixes with the potato. And roll it up instead of folding. My mom used to make them when we didnt have too much money. They are super tasty.
I'm Mexican, Tamales have more masa than that... It's not cojita cheese, it's COTIJA... TACOS are not just bended, those are potato quesadillas with salsa and creme, your steak tacos are the real tacos (and they change only in the food or meat you put into them, we don't use creme or yellow cheese on them), here in Mexico we don't eat hard tacos (And if they are hard/fried, they are round)... For the other recipes, totally great, congrats, I love all the things you do
