Same thing happens to me. So, of course, being old I go into my tutorial about how I grew up with pastelillos and empanadillas.
My two college roommates always called the pastelillos. So I only knew to call them this. Now I understand why I would say it and depending on where I was, people would look at me funny 😂. Having moved to Jersey in the mid-70s somewhere along the line I started hearing them called empanadas. Have no idea how that renaming started. I do know that when I go williamsburg, bklyn, and 116 in El Barrio they still use the term pastelillo. Outside of that all I hear is empanada. Bummer. Where and when did the name change? Thank you for all your work. Love your recipes. It is truly a labor of love.
I’m Puerto Rican too 🇵🇷and I just had some with Spanish chicken stew cheddar cheese mozzarella cheese and fry them up they are sooooo delicious 😋 😋😋😋😋😋🇵🇷 I don’t use a fork I pinch them at the edge fold it up keep pinching and folding I fine it faster that way don’t leave the disc too long in the freezer because they will get dry at the edge when you see that the edge gets dry just go around to cut the edge off then it will become soft again always put them in a plastic bag otherwise it will get dried I’m 67 years old I been making them since I was younger my mom God bless her soul use to make them for me and is a pass down for my kids which they are adults now 😬

I was born in Ponce and we always called them empanadillas. I only ever heard Pastelillo when i first came to the U.S. To us Pastelillos were the puff pastries with guava filling and powder sugar on top. Its weird because literally pastelillo = “little cake” and empanadilla = “small empanada”. But doesn’t surprise me. P.R is small but the people are very diverse in looks and way of speaking.
I like the meat recipe which is similar to mine but I never use the disks. Even my kids like when I make my own dough. But this is a great recipe for people that want to shorten the time for making the pastelillos...and thank you for using that term because I hate when people call it empanadas, which are different!

Also, the sofrito. I found some but it says its a tomato cooking base. The one you use is green. I also found one that is a cilantro cooking base "Recaito". I am guessing it's the cilantro one but wanted to make sure :) thank you!
For Sazon - we usually use the one with cilantro y achiote. Yes, the Goya recaito is closest to sofrito. I strongly recommend making your own sofrito. We have a really simple recipe - ua-cam.com/video/GU0BR4hhdkA/v-deo.html

Daniel - again, not sure if you are talking about some different dough that we have never tried or seen in PR but the pre-made dough is actually pretty similar to the pastelillo dough and it is a great option for people that doing want to make the dough from scratch. If you want yours orange there are some brands that even sell the one with achiote and the orange color. While Puerto Ricans in north east philly may have developed a different type of dough for pastelillos that is not eaten in the island. empanadillas dough is solely flour based. The orange color simply comes from achiote - some people like the flavor and color. Adding a packet of Saxon will do. It depends. I like to use a thermometer and test the temperature throughout and adjust accordingly.
