Great video, I’ve got a lot of good ideas from you out of this one. Here’s one for you how about using a wedge shaped shim where the stinger mounts on the transom to counter the angle. Just a little to give you some more down angle if needed.
The horse emblem is awesome, good idea to give it a little class👍👍👍 BGFL
Get better edges by vacuum bagging. It's hard to get carbon cloth to conform to sharp bends

That battery tray looks great! I would only have one concern. Is that logo still trademarked? If it is, you could catch some grief from whoever owns it. Probably be OK as long as you didn’t try to sell them. I spent a lot time in corporate America and I know the big copyright holders have rooms full of lawyers that continually chase down infringement. It sure looks great though.

Have you got a Proboat 3831 used blue motor you want to sell?
I do have one but it's in rough shape and don't really feel comfortable selling it

where did you find decent priced carbon fiber plate? everything seems super expensive for some basic flat vac formed plate.
I laid up my own CF Plate. Usually get the 2mm cf plate from Offshoreelectrics www.offshoreelectrics.com/proddetail.php?prod=ose-82044
