this dish is not limited by the ingredients, the basic ones are the rice paper, the green onion, the egg. The rest can be changed to taste. In the South of Vietnam, we use small shrimps and chopped meat mostly, and quail eggs instead of chicken egg.

Grilling it on a coal grill gives it more flavor. I've eat these around southern Vietnam but Da Lat's night market version were the best tasting.

Tips: you can add butter or cheese underneath (on rice paper's surface) so it melted and stick egg to paper later easily.
Don't try to put too much ingredients because when you fold the paper, the ingredients will come out and the cake will be soggy as well as too heavy. The ideal one is crunchy with suitable amount of ingredients inside.

Vietnamese people eat Bánh Tráng Nướng, first add cooking oil, spread the sauce all over the rice paper, then fill with the scallions and eggs. It really delicious.

Interesting combination of ingredients. I'm not sure I'd like the flavor but the final result does look good.
Oh... these are so addictive if you try them. My wife introduced them to me when we went to Da Lat in Vietnam in 2018, well she was my gf then... but there's three things I have to do when we go to Da Lat and its grab two of these from the night market, have a pizza at Vuong Pizza and get a haircut with a shave from the barber on the street just south of the famous church with a rooster on its tower. These are best eaten really spicy.

Just a quick note that you have left it a little longer on the pan than it should. Usually bánh tráng nướng is best served when it starts to simmer a bit, then you flip both sides so that they don't burn. Anyways, great job!!!

ah thanks for the idea have not thought of putting oyster sauce. As some Vietnamese commented, many variations are possible with any ingredients of one's preference :)

what is good about this is the rice paper, makes it lighter and healthier, the bread/base/dough is just the transport medium for the "food", so having it light works good, I would skip the pate and crazy cow, but use grated cheese

We have something similar to this in India, it’s called the masala papad but its all vegan, also we have stuffed Dosa with different kinds of toppings

It should be translated as "grilled rice paper" simply bc its made from rice paper. Quesadilla used tortilla, pizza has it own type of douge so dont use their names for our BANH TRANG NUONG :)

I lived and worked in vietnam for 11+ years and never seen any ‘street food’ remotely like this.
Having said that, I ate ‘street food’ on a regular basis and it was always tasty, fresh and flavor some.
This dish was invented in Dalat city. It's not quite popular in North and south Vietnam.

I tried it today but with much less ingredients. The rice paper makes this really nice crusty contrasting crust. I have egg batter and real eggs, but I don’t like using real eggs unless I am making poached or sunny side up. It was ok but it for sure needed more stuff.
I wouldn’t call it a quesadilla, just because the tortilla and the rice paper are so different, but as someone that is trying to cut down on carbs I would rather eat this.

Don’t coat the pan it doesn’t need any. To make it crisp, leave the rice wrap on the pan longer
Dont coat anything. Because the egg will make it crispy
It's not as cripsy as chips, you can never make it that far, but it'll fail if it's not cripsy as well

@@howtao8199 many type of them, depending on area and use purposes. Type in this video, Vietnamese often use it for wrapping. When bake it, it cooked so quickly. A little thicker, can give you more time to cooked topping without burned the rice paper, and more balance the flavour final. Feel sad for foreigners, this thicker type really not easy to find, so she must use common type.
Just put one you made a bit wet on top of the first one. I'll stick and then you have a thicker one. Get creative.

Most certainly a quesadilla rather than a pizza but I understand why they said pizza. Most viet people outside of texas or california don't really know mexican food so it's not accurately translatable or relatable in Vietnam. They say pizza just so people can kind of understand it easier in translation.

the direct translation of this dish is, rice paper grill, add some english grammar because we have different grammar, it’s grilled rice paper. so my conclusion, call it whatever you want its still “bánh tráng nướng” for us viets. idc if its pizza or quesadilla its still good and VERY TASTY. Y’all should try it, but caution it may be spicy for some people if you include all that hot sauce :)

This is a street food dish in Vietnam, very cheap and very tasty. You can get it for about a quarter of 1 USD. We Vietnamese jokingly call it Vietnamese pizza all the time. And the best thing is you can just mix and match anything for the ingredients. Man I miss it after moving to the States.
