I filled rice paper wrappers with a blend of shredded mozzarella cheese, ricotta, cooked spinach and finely diced Shiitaki mushrooms, then pan-fried them in avocado oil. They were wonderful! Thanks for inspiring me to try out new ideas with rice paper!😃
we took half of a slow smoked chicken (de-boned and chopped), mixed in a block of cream cheese and stuffed seeded jalapeño halves, rolled in rice paper and deep fried. amazing
My 8 yr old made her own quarantine creation the other day using instant oatmeal, pumpkin butter, homemade dandelion jelly, and cinnamon wrapped in rice paper.
I used your idea for the salmon but with tuna steaks! I used enoki mushrooms, red cabbage, chilli, cilantro, mint, basil, and a blood orange sesame glaze I made. I also tried steaming one in kombu. Thank you for the inspiration!

I really enjoyed them. Fun to make, too! 2 things: 1. I found it tricky to keep the oil temperature just right. 2. Cooking with flavored oils can have a big effect. I cooked mine in canola oil and it brought a lot of that canola flavor to the crackers.

Wow! Those rice paper crisps remind me of a South East Asian snack called 'keropok'. It's just flour and some other ingredients mixed with fish and fried. They look almost exactly like those crisps!

Flavors could be shrimp, garlic, etc. Some are sold fried, but households usually fry them in a batch and put in large containers to be eaten as side dish or as snacks.
That crunchy delicious sound of the fried rice paper reminded me of that of Vietnamese sandwich, which makes feel so hungry. Best of all, the rice paper sushi is absolutely creative! It looks fantastically delicious.

I love to make ebi sunomono salad as well as spring and salad rolls (3 of the fastest and easiest lunch/snacks ever) so I usually have rice paper and rice noodles on hand, but I never knew there was SO many other things you could make with them, especially desserts...until now. Thanks to your love of food experimenting/food hacks and a joie de vivre personality both of which we seemingly share (must be the French in us...lol), I have already watched part 2, have since subscribed, and I can't wait to check out all your videos.

That translucent rice paper sushi with the leaves is so beautiful! *_* Ah, the potential it has! One could use a criss-crossing pattern of mizuna and rocket, edible flower petals or just colorful vegetables. It could really be a highlight or show-off piece on a sushi platter.

about the salmon... would it be possible to fry it after you half steamed it? it would crisp up the outside ynd leave you with the ultimate fusion of a springroll and fish and chips ever... or so i think at least...

Maybe an air fryer?
Because it has to be damp to fold it will not crisp up the same. (Plus the crisp is super fragile and would fall apart if you could)
