@@richtexas4431 yes. I cook smash burgers on mine so it gets really hot. You get used to the brown and black colors. As long as it's actually clean grease and grime wise it's ok
I own a stainless steel griddle for my burger business and I always get discouraged when I see polished looking griddle 😅 but it seems I’m not the only one with a discoloured stainless steel griddle
Use simply water. Heat up the griddle and turn gas off. Then put slightly water on the surface and use a stainless steal scraper, repeat until it‘s clean. Grease the surface with someoil and heat up again. Then switch heat of, and swipe remaining oel with some paper, use gloves.😊

That "discoloration" is needed, you need to season your griddle before using it. Same thing with woks

And there is no reason to, it’s not for looks, it’s for cooking on.
