Thanks for this recipe! Here in the Philippines, we typically cook Jackfruit braised in coconut milk. Just sautee it with garlic, onion, ginger. Traditionally it is seasoned with fish sauce because we're a seafaring country, but you can definitely just use soy sauce, or salt and vegetable broth. Then add coconut milk in the end. You can add banana hearts too, but I don't know if they sell that in Western countries.
My husband doesn't like coconut milk dishes though???? So I bought some jackfruit because we're trying to slowly integrate more plant based meals, but he refused to eat the coconut milk dish. So I found you hunting for a recipe he might appreciate. Anyway thanks for making my life a little easier today!

The banana hearts are the center of the 'trunk' some eat as palm hearts?

Another question, how do you peel and chop green Jackfruit without the inconvenience of the sap? Oily hands and knife as other videos?

Just made this along with the video. Turned out delicious! I added some flax meal and a condiment I make from nutritional yeast flakes blended with pecans for a cheesiness, then a bit of tamari for salt and color. I made vegetarian posole, put the cooked, spiced jackfruit in the bottom of the bowl and voila! Like meat posole.

I made these and both my husband and I were completely delighted with them. Delicious, filling, and a very nice change from the usual fair. We went 'weekday vegetarian' a while ago. My husband did say, "You know what would make those just a little better? Chicken." We haven't completely gone over to the green side, but we're making some progress.
