Shelves fill, freezer empties!
I just opened a jar of canned smoked ham. Used it with half a jar of black beans for a chef salad of greens, radishes, and cilantro that came from the garden. This month I have canned 12 pints sweet potatoes, 6 pints raspberry pie filling, 4 half pints raspberry syrup.

This month, I have canned some corn (not as much as I wanted, because a lot of it was no good (but $.20/ear,so not a great loss)., chicken (taco flavor) and pork butt, a few peaches and some cherries (some in Amaretto).
I really didn't need more meat right now. But there have been some great sales.
Just canned Strawberry Jalapeño Jam with strawberries I froze in June. The recipe is from Cosmopolitan Cornbread and oh so good. This time I made a low sugar version using Pamona’s Pectin. Delish! Love your channel.

Cutting up a port butt takes me twice as long as cutting up a chuck roast. With all the fat and bone, I sometimes just want to give up.
What I do with some of mine is get a packet(or 2, depending on how much meat you have) of dry rub and coat the meat... just combine everything in a bag and shake it.
Then fill your jars as usual. I label this as "Pulled Pork" because that's what I mainly use it for. Just open, add bbq sauce, heat, and serve on a toasted bun. Great taste.
It's also good made into a burrito , using refried beans, rice, etc.

I just canned 21 pints of chicken broth. I have a lot of quarts but need pints for when I make curry!
I did chicken and ground beef. I love having canned meat in my pantry.

Bone marrow grosses me out too! BUT I use the bone from a pork butt and of course beef and chicken bones for broth! I just don't touch them or even look at them after cooking them down 😂
🤣 we don't care for pork broth so the chickens enjoy these little bones 😀

It was 2 very small bones and we don't care for pork broth. But the chickens loved the bones! 😀
I haven't started canning from my freezer yet. I'm canning out of the garden 😊 I'm in the process now of doing green beans. I'm trying to use my electric pressure canner and three times now it will count down from e 10 to e 0 and when I turn the valve to airtight it does nothing and starts beeping after 5 minutes 😭 Anyone have any tips?
Is your lid locked? Once that happened to me and I didn't have my lid locked
