Easy Keto Creamed Spinach

  • This quick and easy creamed spinach is the perfect low-carb side to go with pork chops, roast chicken or fish.

    Ingredients (makes 3 servings):
    600 g fresh spinach (1.3 lb)
    2 tbsp butter or ghee (28 g/ 1 oz)
    ⅓ cup mascarpone cheese (80 g/ 2.8 oz)
    salt and pepper, to taste
    ¼ tsp nutmeg
    ⅓ cup grated Parmesan (30 g/ 1.1 oz)
    Nutrition facts per serving:
    Total carbs: 8.2 g
    Net carbs: 3.7 g
    Protein: 10.9 g
    Fat: 20.5 g
    Energy: 248 kcal (calories)
    Carbs (6%) : Protein (18%) : Fat (76%)

    I sauté the spinach in a frying pan with butter, olive oil and garlic to cook down, then add a little heavy whipping cream and cheese.

      I saute the spinach with a little bit of water at the beggining unil it shrinks and then add butter or olive oil just to not overfry it.
      You can also microwave it for a minute with little of water and lid on the top just to make spinach to shrink.

    The problem with this method is that You dump with water a lot of vitamin C.

    This procedure of cooking is not good. As most of the nutrition will be lost in water

      Any heating will have a negative impact (eg vitamins that are not heat stable). 20-30 second blanching is a gentle cooking method.

      @@TheKetoDietApp Im coming from functional female force , diese recipes es correct with Hashimoto deseases ??
      I have understood that the milk products aren’t gut with Hashimoto. Parmesan und mascarpone are milk products Oder ?
