There are a few things I think are important with all you cooking. 1. It doesn’t matter what it looks like. It only matters how it tastes. It takes time to refine your skills to roll out a round pie pie crust. 2. You have Elana helping you. Such good parents to involve her and teach Elana how to cook at her age. Doing things with her is the best thing to do. 3. Don’t worry about what others will say. You are doing great. Keep up the great work. I like peach pie and enjoy them made with fresh peaches. Peach and blueberry are my two favourite fruit pies, and that lovely peach pie looks delicious! Junior Chef Elana definitely deserves some credit for that.

Making things from scratch isn't easy, and its becoming a lost art. Never be ashamed of messing up, you're doing more than most of us are nowadays. I'm relearning framing carpentry and make lots of mistakes, but I continue on. Cheers to Mrs. H! 🇺🇲
When making the bottom crust for the pie all you need to do is roll it out a little bigger than it needs to be and then trim the edges. When making a lattice top you can roll the dough into a rectangle and cut your strips, lattice it and then cut off the excess. This is way easier than trying to shape the dough into the perfect size and shape to begin with.
I typically just sprinkle white sugar on top since I know brown sugar when baked will look burnt. Still gives you the sweetness plus it gives a nice clean look. When I bake a pie I always make extra pie crust and make the base large so it hangs off the edge on all the sides. Make the top and trim off the edge giving about a 1 inch excess border with the top and bottom. Pinch and tuck the top under the bottom along the edge all around the pie. This will give a really nice look along the outside of the pie. All extra dough not used for the pie I flatten out and put on a cookie sheet, use an egg wash over it and sprinkle white sugar and cinnamon over it. Bake it until it is crispy and eat. It's a very simple recipe for the extra but I always enjoyed eating that along with the pie.
If you have frozen peaches over there, I'd recommend them. They have a more natural taste. You might have to bump up the sugar at touch since they don't have syrup. May I suggest you patch holes on the edge of the crust before filling. This will help keep the juices from leaking down the sides. You won't have to soak/scrub the pan for so long when cleaning up. You had plenty of dough over hanging the edges to fill the gaps. Butter crusts have good flavor. But, they are easier to overwork than shortening crusts. The last couple times I've made them, my kitchen was too hot (ahh, summer in Texas) and I fought sticky crusts. You could have shielded a nuclear reactor with my pie crusts, lol. Sanding sugar is a nice touch on the top crust. It gives you a sugar glaze without the dark splotches. It's more of a pie for company touch. In the fall, do you get fresh cranberries over there? If so, throw a generous handful into your apple pie filling and change your lemon zest to orange zest. Cranberry-apple pie is so good.
Momma always says her pies ain't "blue ribbon down at the county fair" worthy, but no one complains when we stuff it in the belly! Looks delicious. Note: My momma don't actually say "aint". She mostly succeeded in teaching us not to swear. Proper grammar not so much...😁

I use to make a nectarine blueberry pie. Slices of nectarines and just sprinkle in some blueberries. I think a peach blueberry pie sounds yummy too 😊 You're doing an amazing job with your "American cuisine " cooking.
I live in Washington state, and I have had peach pie and peach cobbler, and my mother used to make a Swedish Peach Pie that was very good but different from the other two types of pies.

Thats my comment! Canned peaches gave been "sat" (as you Brits say) in a sugary syrup for who knows how long and so they are Over Sweet already, slippery, slimy and soft. Fresh peaches are best, frozen are next but Dont Use Canned! You want the firmness of those fresh peach slices that take on the cinnamon and sugar during baking and become caramelized! Too watery/syrupy from canned! BUT, Elana gave it an 8 and y'all did a great job together!!! Happy eating while warm with some vanilla ice cream on top!! Cherry and Blueberry are my favorites!
I'm a bit biased when I say that my 4 year old niece is the cutest thing on the face of the planet, but Elana reminds me so much of my niece. My niece loves to get involved with helping her mom (my sister-in-law) cook food and Elana does that with her and I think it's such the cutest thing on Earth. I did the same thing when I was little and now at 33 I have learned how to cook from my mom. Kids are such a precious thing from God. Love the videos as always and sending love from Missouri, USA.
My peach pie recipe is somewhat similar, except I don't use lemon, I double the vanilla, and I add in little chunks of cream cheese and chopped pecans to the peach mix. Add a generous side of homemade vanilla ice cream when serving and it's like Heaven came down and landed in your mouth. For another amazing Southern favorite, make a hummingbird cake sometime. Pro tip: use bananas that have turned brown, and don't drain the pineapple juice from the can. Lovely job with your peach pie, H ladies!
Elana's vocabulary is growing and so is her cooking skills. Tip: If you lay a ruler on top of your dough. Cut along each side of the ruler. It will give you straight uniform strips. ✌️

I turned 58 this year and have lived in Texas all my life and I don't get my peach pie filling to set as well a third of the time as you got yours to do on your first one! You cooking and baking skills are top notch! Especially considering you're cooking recipes not even regular for your location! 👍🏾 I won a cooking contest with my family’s secret recipe. Beat out some professional chefs, and could not convince them that I didn’t work at a local restaurant they all had in mind. The family always made large pans for get togethers. I had to experiment to get the recipe to work in a pie plate. I experimented with it for months, and my mother’s friends started dropping off the ingredients so that I could perfect it, and they could eat along the way.

Quit doubting yourself Mrs. H! I turned 58 this year and have lived in Texas all my life and I don't get my peach pie filling to set as well a third of the time as you got yours to do on your first one! You cooking and baking skills are top notch! Especially considering you're cooking recipes not even regular for your location! You are awesome and I would sit at your table and very likely clean my plate each time I did! Yours and Mr. H, AND Little H's enthusiasm and love you put into everything you cook would make it delicious!

Use a knife to round a pie once it's in the pan, it even helps when you are doing a lattice top.
When we make pies we always roll them out in white sugar. It makes it more crispy.
I'm a key lime and lemon meringue pie guy myself, but I do enjoy other pies as well.

👍🏾 I won a cooking contest with my family’s secret recipe. Beat out some professional chefs, and could not convince them that I didn’t work at a local restaurant they all had in mind. The family always made large pans for get togethers. I had to experiment to get the recipe to work in a pie plate. I experimented with it for months, and my mother’s friends started dropping off the ingredients so that I could perfect it, and they could eat along the way.
you can take the leftover dough and put some cinnamon and sugar on them and bake them makes nice cookie
