      Hey Mr. Mrs. H, I’m from Downey, CA. (Only because you asked us to post our locations. Anyway, when you brushed the melted butter on top. That looks like way too much. It’s just a light brushing of butter, just enough to give it a glaze. If you see it pooling, it’s too much. 😳

    I'm in New Mexico and never heard of a sopapilla cheesecake. We just eat our sopapillas with honey drizzled inside.

      I have a cheese cake cook book with one in it. Every time I work up the energy, I just think 'why not just make sopapillas?' But the cheesecake might be well worth it.

    Another original Texas dessert recipe: German Chocolate Cake. The recipe was submitted to The Dallas Morning News in 1957 by a housewife who lived in the Pleasant Grove area of Dallas. The reason it was called German Chocolate cake was because the recipe used Baker's German's Baking Chocolate, the gentleman who invented the special type of chocolate was named German. The recipe spread like wildfire and soon thereafter the chocolate company put the recipe on their product wrapping. It became a favorite nationwide and is still popular today.

    Every Mexican buffet in the southern states has sopapillas that comes out nice and really warm. So light and airy, I can smell the fresh warm dough. I would poke a hole into the middle of the sopapilla and then squeeze the honey into the square pillow of that warm Mexican dessert goodness. I would keep raising the flag until I could not eat anymore.
    I'm waiting for the Loco Moco video. That is the Hawaiian version of our southern "stick to your ribs" comfort food. It's warm, filling, delicious, and a hour nap with a smile.

      The last Tex-Mex buffet that I know about (Austin area) was Poncho's. It's gone, and the only one left is in Arlington. If there's another one somewhere around here, I need to find it. :)

      @@Miesque1973 yeah, I'm talking about Poncho's. We had one when I was younger, but since been gone. They reopen after hurricane Katrina, but it was not the same and at a different location. You had to get your own food like a regular buffet, no raising the flag. The two managers from the original Poncho's open 2 Amigos and it was perfect, but could not survive the pandemic. It wasn't as good as authentic Mexican, but you could have a little of everything you wanted and that's priceless!

    Well done, Hs! Mr. H, don't be so hard on yourself! You saw 1st hand that your dish can be saved. Count that as a blessing. Look how it turned out! I praise you for making your own crust as I have never been brave enough to attempt that myself!

    I keep my active dry yeast in the freezer. No problem with it. I keep it in a glass jar.

      I don't Freeze mine, but I do keep it in a Sealed Glass Jar in the refrigerator. Also, I always keep my refrigerator turned down to a colder setting than most do. It tends to keep things fresh for a longer time.

    You really need to make Sopapilla's so you can understand what this recipe is based on. Sopapilla is a dough/pastry that "puffs up" when you fry squares of it, and it's hallow. you pinch off a corner and fill it with honey (or whatever you like). Very delicious. I'm not familiar with Sopapilla cheesecake, so I'm not sure if it's named because it's originally made with Sopapilla dough, (in which case using croissant roll dough is just a shortcut), or if the name comes from the idea of a filling between dough/pastry. Either way, i'd much rather have a Sopapilla then a biscuit or roll.

    Lived in Tx. OK. for 20 years. I've never heard of sopapilla cheese cake.
    Have eaten many sopapillas with honey or cream. Looks lovely!

    Sopapilla means "little pillow", IIRC. They're served as dessert at Mexican restaurants. They're like a flat bread, rolled thin, then deep fried. They puff up into hollow pillow shapes, hence the name. You bite off a corner, then drizzle honey inside and eat. Try them when you visit Texas.
    Stuffed sopapillas are sometimes served here in Colorado. The dough is filled with burrito filling mixes like beef and bean, chicken or such, then deep fried. Often served with green chili on top and some sour cream. They'll knock your socks off.

    I’ve never had it but it looks like it would be awesome. My mom would make sopapillas when I was kid. They’re great with honey and cinnamon. Or plain as a side with beans, pork green Chili, Chili Colorado, or Posole.

    It is fun to see you a fun and goofy time in the kitchen together. You are very adventurous to try so many new recipes. This will lead to being a great cook. I have never had Sopapilla cheesecake. I have eaten and enjoyed Pear Burritos which is a whole discussion on its own. They only resemble a burrito in that a flour tortilla is used but they are a yummy dessert. They use mascarpone cheese instead of cream cheese.

    Another thing to try on the next trip. Sopapillas for dessert with a Mexican meal. And sometime The Cheesecake Factory. Which I don't think has sopapilla cheesecake. Good luck with it.

    I'm from Texas and have ate this all my life. We use crescent rolls for the dough. It's better after it's been refrigerated.

      Where do you live in Texas? I’ve lived in 2 regions of Texas and have never heard of it. Real sopapillas yes but “crescent dough sopapillas”, no. Much less sopapilla cheesecake.

    The little yeast packets are sized for a loaf of bread. I buy yeast in bulk, and keep it in the freezer. I keep a few tablespoons at a time in the fridge, in a glass jar.

    To transfer a crust , roll it on your pin and gently unroll it on your dish. Simple and quick.

    There is a Terry Black's in Austin. Don't miss out on the beef ribs. Lucky for you, the temps are supposed to be cooler by then. I would not wish the temps we have been having on anyone. Today it is 106 f, same for tomorrow.

    I actually make this here in North Carolina using crescent rolls, but we call it cinnamon cream cheese danish. It is really good. You both did an amazing job. ❤

      I'm originally from Virginia, and I would also call it a cream cheese danish. I now live in Arizona, and I can say that crescent rolls are not authentic sopapillas.
      Sopapillas are thought to have originated in Albuquerque, New Mexico, more than 200 years ago. New Mexican sopapillas are made from a tortilla-like dough. The dough is fried until it is puffy and a small air pocket appears within the pastry. In New Mexico, sweet sopapillas are often covered in honey or some kind of syrup and powdered sugar. Savory stuffed sopapillas are also popular in New Mexico. They are prepared the same way, but instead of honey and sugar, the pastries are stuffed with ingredients such as refried beans, cheese, peppers and meat.
      The sopapillas I've had in Arizona are made in the same way as described above for New Mexican sopapillas.

      I have family in North Carolina. kind of spread out all around, but I know we have a family cemetary somewhere in Madison County. I also know one of our family members helped to develop somewhere called Chapel Hill.(though I'm not sure where that is at as I'm from Texas and have not been to visit my family up north.)

The town is in Orange and Durham counties. Chapel Hill, Durham, and the state capital, Raleigh, make up the corners of the Research Triangle, which is home to three major research universities: North Carolina State University in Raleigh, Duke University in Durham, and the University of North Carolina at Chapel Hill.     Some cooking hints. When using a mixer to mix in the butter into the flour, cut the butter into chunks instead of throwing in the whole stick. Use a bench scraper to cut the dough into sections. Draw the shape you want to make the dough onto the paper then roll out to fill in the drawn shape. Use the rolling pin to pick up the dough, put the rolling pin at one end of the dough then wrap the dough around the pin while rolling then place the rolling pin at one end of the dish or pan, then unroll the dough.

    When you go to Texas look for a Cheesecake Factory. Many people really love it. It's actually a restaurant with a full menu and beautiful cheesecakes!

    Alana is just too cute for words. And that desert looks yummy. I am definitely going to make that. It is not a true cheesecake and reminds me more of a chess pie but I bet the cinnamon just gives it that extra kick. I love Cinnamon.

    I visited one of my best friends a few years ago in TX. If you are able i highly recommend San Antonio, it was so much fun . The Alamo and the river walk , both so cool .

    I'm from America and I've never heard of sopapillas cheesecake. It must be a regional thing in a different region than my own. I was curious on what a sopapillas cheesecake could be because sopapillas and cheesecakes use completely different cooking methods. Sopapillas are deep fried in oil and cheesecakes are baked in an oven. Crescent roll dough is nothing like sopapillas dough. Sopapillas dough is very similar to dough used to make raised donuts. A sopapillas is a Mexican version of an beignet with the sopapillas being cut into triangles and beignets are cut into squares.

    1st I have to say this... you two are so cool and your daughter is a superstar and adorable! I love when she makes appearances. Your cooking videos are fun and I often watch them when I need a laugh or just want to see some friends from across the pond. I live in Maine and I have cousins in Texas.     As i'm sure others have mentioned - Austin is the live music capitol of the US. Ya'll will find many acts play at the local bars, from about 7PM - Close. Just ask any local, when you arrive, and they'll point you towards the best music joints.

    While you are in Texas you should of course go to Buccee’s but you should also visit H-E-B. It’s a Texas only grocery store and it’s my favorite store.

    Margot from Kentucky, here! A "famous" Kentucky dish is the Hot Brown, invented at The Brown Hotel in Louisville in 1926. I'm certain there are lots of variations, but Mother always made them with the leftover turkey on the Saturday night after Thanksgiving! She just made a basic bechamel white sauce with cheddar cheese added as the cheese sauce topping. If you decide to make it sometime, DO NOT use lunch meat style turkey; use real sliced turkey breast!

    So many American recipes were devised because of the British blockade of the colonies during the Revolutionary War. The Colonials had to make do with few ingredients while trying to make food tasty to the settlers... hence recipes such as lobster rolls, clam chowder, crab bakes, sugar pie, gumbo, jambalaya, etc.

    I'm a 50 year old native Texan and I've never heard of sopapilla cheesecake.
    It sounds interesting though.
    I guess it's Tex-NY-Mex??
    I haven't had sopapillas in a long time but I do remember them as dessert when I was a kid and we would go to the classic San Antonio Mexican restaurants, especially Karams (RIP).

    I don't know where or when sopapilla cheesecake got its start, but I'm sure it hasn't been around that long. It was inspired by the fried pastries called sopapillas that are light, airy, and often drizzled with honey.
    As for my favorite cake, well...I like most cakes. I do have a few favorites, like carrot cake, pineapple upside-down cake, and tuxedo cake. Have you ever tried tomato soup cake or chocolate mayonnaise cake? Those are good, too.

    Probably should have just cut that butter in by hand. Cold hands work best. You don’t want the butter to melt. You do want the butter in smallish flour mixture covered nuggets. This ensures a good flaky texture that is quite yummy.
    Also, roll once, fold in half and give it a quarter turn, repeat 3 or 4 times. Then roll into a rectangle that’s bigger than your pan. Careful not to add too much flour, you want to keep it pliable. For the pan you used I would make it 2 inches bigger all the way around. Cut a triangle into each corner and make that your bottom crust. If you’re going to top it with a top crust go for an inch longer and wider so that you can tuck the top crust into the bottom and then crimp top and bottom together. Finish with an egg wash for a crispy, shiny crust.

    This is one of my favorite deserts! In fact, I'm not a big fan of cakes, so for my birthdays, my ex wife would make this for me instead of a birthday cake. She also would make it for Thanksgiving and Christmas. Yours look perfect, I hope it tasted as good. It really is a big thing here in Texas.

    Two Ways to Transfer Pie Dough
    First up: The rolling method. Once your dough is rolled out, you simply roll it onto the rolling pin, then unfurl it into your pie plate. This works especially well when making a crostata, where you are unrolling the dough onto a flat surface.
    The second method is folding. This is the way we usually transfer our pie crusts. You gently fold the dough in half, then in half again, making a triangle. It’s less likely to tear as you pick it up, and the beauty is that the point of the triangle goes right in the middle of the pie plate. So, if you’ve rolled out a decently uniform circle, the dough will unfold perfectly centered.

    Baby H is getting cuter and cuter! You are saying it correctly - "Sopa Peeya" - Sopapilla. It turned out great - I bet you could even put a layer of thinly sliced apples over the cream cheese mix or candied pecans. Yum. I hope you enjoy Texas when you go. You definitely need to make a trip to California - south and north are both beautiful and our food is influenced by Mexico and many Asian countries, so you get some great blended recipes. I personally love a good rum cake or coconut cake , so maybe you can try making one of those. I bet if you reach out to some restaurants wherever you end up going, they would let you film in the kitchen/at the smoker and would let you try their specialties. I'm sure they'd love the publicity since you have a great following.

    1) You can keep dry yeast in the freezer to help it last longer it is where I keep my glass jars of yeast and they last for 6+ months.
    2) you can roll your dough around your rolling pin to transport it just like when you are making a pie crust but chilling the dough likely would have been a good idea as well since crescent roll dough would have been cold.
    I am from Missouri and have never tried this dish.

    Good job! I’ve made this many times as Pillsbury’s sopapilla cheesecake bars. A tiny bit of almond extract in the filling is great. They also go really well with a nice aged scotch.

    Indiana here.. When I was young I lived in texas.. Corpus christi. Went to Whataburger.. Loved it.. I remember the burgers being salad plate size.. As big as my head.. Probably not the same anymore. Everything seems to have downsized.. Hoping that's not the case.. Would love to see you try that for lunch.

    When you're in Texas, you need to try real sopapillas. The Mexican restaurant near me dips them in cinnamon & Sugar, and serves them with honey and a sweet cream cheese.
