You're welcome Don! I would not freeze it with the potatoes in it....the potatoes tend to get "grainy" when frozen. I would separate the part you are going to eat and add the potatoes (or noodles) to just that amount. Hope this helps! Thanks for watching!

I use all of the broth from simmering my turkey. I would say 12-14 cups at least..BUT I make a big batch and freeze most of it. Depending on how much you want you can adjust the other ingredients to how much broth you use. Seasonings are to taste...some people like less seasoning, some more. celery , onion, carrot and salt that is all you need, why do americans have the habit to put all those spices in everything they cook that are not necessary?

You will be SURPRISED at the flavor when you simmer it at least 5 hours. I let mine simmer in the crockpot over night, then pull the meat off the bones. If you use the bones, (flavor) add a couple of tablespoons of apple cider vinegar to draw the flavor out of them while simmering.
I should have known better than to use 2 tsp. black pepper, but I followed the recipe. BIG mistake, way too peppery for my taste. Ruined the whole pot in my opinion. Should have stuck to one tsp. only. Never again.
I'm sorry Cheryl! I used the carcass from a 24 pound turkey, so there was a LOT of broth. I just put a note on this recipe indicating this was for a BIG pot of soup. I appreciate you watching! Happy Holidays to you and yours!
A trick I found out when I put too much pepper in a soup, I froze it anyway not to waste it and when you defrost it awhile l;ater, the pepper was not strong like before I froze it
