    Note of advice regarding siphons: if your siphon has a dip tube that reaches the bottom of the canister (like the second one in the video), it's right to invert and then release the gas like Kevin shows. But if your siphon does not have a dip tube (like the first siphon in the video), you should release the gas with the siphon upright. If you get these backwards, you'll end up shooting out the contents of your siphon all over the place.
    I only mention this because I only have a 1L ISI whipping siphon, and you can still make the drink with only a whipping siphon. Just make the base first, discharge (upright!) and pour the contents into a bottle (or make all your cocktails at once!) and then clean it out and use it make the foam.
    Love the idea of using the methylcellulose to make foam. This is a great trick and how I will use it the most. It's also nice to "recharge" your drink by topping it off with more foam as you drink it. :)

    I am strictly an ale drinker. I don’t drink spirits or wines or anything else. They just don’t do it for me. But this content just keeps me coming back. Watching the careful preparations, the attention to detail and listening to the beautifully written/delivered description of the process is utterly engrossing. Never stop Kevin and co. This is amazing.

    Absolutely unreal idea!!! I'd consider drying mint leaves and grinding those into a fine powder for the garnish though. I doubt it would be too bitter, but you are probably right with the earthy notes from the matcha instead of more mint.

      Exactly. It would be to mint forward but of course, that can be done too. Maybe dry leftover mint from mint water and use that.

    As a mad dog when it comes to coconut milk, Ild even give a try to a regular mojito but just replacing the soda by fizzy coconut milk.❤😮

    A lot of Tiki cocktails use mint as a garnish... I would love to see your spin on a MaiTai or a Zombie!

      You can make foam using soy lecithin, pectin, gelatin, and agar agar. A lot of possibilities.

      If it's sweet then use less or zero sugar syrup. Otherwise yes, it would work great together.

      Yes, you can! You can also make it in a blender and scoop up the foam.

    How many times did you have to try this, then try it then try it again? Getting the balance with so many ingredients seems a daunting task. Sometimes balancing a Martini or Daiquiri can be stressful. Whats your trial and error process like? That might make for an interesting set of episodes.

    Hello Kevin, the carbonation procedure makes for only one cocktail..? So every time I want to make a mojito I ll have to pour the rum, lime, syrup into the sifon?

      This one was for two cocktails, but you can carbonate more liquid in a siphon this big. Pre-batch the cocktail and then just put it into the siphon and carbonate it when you need it.

    Would blending be a sufficient way to recreate the mint foam without a siphon? Sadly the use of N2O cartridges is illegal in my country.
