When I take these steps, I’m only able to add the iPhone camera as a 2nd camera, with the FaceTime camera as the primary. How can I set the iPhone camera as the primary and remove the FaceTime camera from the recording?

Hello! After connecting your iPhone, turn off the 2nd camera setting. Then, your iPhone should show up as an option for the main camera. Let us know if you need an more help!
