What better way for June to celebrate than having a $5 limit on ingredients for a 3-layer birthday cake while she's holed up in her NYC apartment? My favorite was a Soviet/Russian cake called Bird's Milk (yeah, I know 🤣). Ptich'ye moloko (птичье молоко). Chocolate with milk souffle. Mmmm....

And some really excellent appliances! Wish I had a Vitamix. You can get a small blowtorch though, quite inexpensively, to use for creme brulee, and assorted art projects.

When you beat the egg whites, you are unfolding the egg proteins and creating pockets of air that are stabilized by the addition of sugar, using a copper bowl, or adding an acid (these last two interact with the sulfur bonds of the proteins). But, the butter competes with the proteins at the air-water interface of the air bubbles, which makes the foam weaker. Salt also decreases the strength of the foam because it interferes with the protein interactions that give the foam structure.

Loved this video. My favorite traditional cake is SO 1960s but here it goes. White cake and white frosting, two layers and in between, vanilla pudding and crushed pineapple. I can guarantee it was all from a box, but it tasted great to a kid. I also loved my Cuban abuelita's orange/lemom rum cake. It was a sheet cake in which you would punch holes with toothpicks. Lay cinnamon sticks on top. Then pour a pretty liberal amount of rum on it every 3 to 4 days. Keep it in a drawer with cheesecloth on top. After a couple of weeks, the rum would crystallize and the cake texture would be very moist but not wet. It was great and had a real kick. Haha.
Hmm, I was always taught to add a pinch of salt. Why science contradicts granny's advise?

I had a black forest cake every year for my cakedayuntil I was 12 and finally asked my mom why we had them when I disliked cherries. She told it was her favorite cake so that's what she always bought. That year I started baking my own cakeday cakes (pumpkin spice cake with cream cheese frosting)

My favorite homemade cake is Brazilian Carrot cake, where the raw carrot is blended together in the dough making it a beautiful yellow color, almost orange color and the frosting used is a traditional chocolate frosting using sweet condensed milk, butter and chocolate. It’s different but delicious and soooo simple to make.

You have to add more butter in little bits and then you have to whip it for 10-20 minutes until it’s stiff again. Happy birthday 🎁

You were trying to do Swiss meringue buttercream which needs the butter mixed in in small pieces to the hot mixture until it is all cooled, at least 10 mins. It also takes more than 1 pat of butter LOL.

It also helps to hold something cold to the outside of your bowl to help stiffen if you dont have time for the 20 min wait. My teacher said he likes to use a bag of frozen peas when at home.
I haven't really appreciated my birthdays since when I was a child, but just this year I realized I can bake myself any cake I want for my birthday, and that made me care a bit more about having a birthday.

For my 18th birthday my grandmother made me an all lemon cake. It was a lemon sponge with a lemon simple syrup candied lemons a lemon cream in the middle covered with whip cream and edible yellow flowers. By far the best cake I've ever had.

I was vegan for a brief stint in college (ah, college) and asked my mom to make a banana cake with coffee flavored frosting and BOY did she deliver. Amazing vegan cake and an underrated flavor combination and I think about it all the time.

Happy Cake day June! My absolute, most favorite, cakes were my Mama Rosie's "chocolate " cakes. If you have ever seen a "Smith Island" cake, you'll have an idea what they looked like, but hers was even better. They were the thinnest yellow cake layers baked in cast iron pans, with a boiled cocoa icing between the layers and covering the exterior. Hers had at least 12 layers. Truly magnificent. She was from rural NW Florida, very close to the Alabama line, and these cakes are deservedly revered there. After that, Mrs Ruby's caramel cakes and Mama Rosie's coconut cakes are next in line. Sadly, all are now just beloved memories.

Favorite cake is a Russian Napoleon cake! Thin, crispy sheets of dough soaked in condensed milk with 7 or 8 layers.... OMG it's so good😭😭😭
I’m diabetic so the best cake that I can have is a frozen watermelon as my bread and whip cream and berries as my frosting 🧁 🍉 and hey I ain’t mad at it 😋 I love fruit!

Not fat for whipping the egg whites - after that you want to add the remaining ingredients :)
It was after she had whipped the eggs whites to stiff peaks though. The issue isn't mixing fat with egg whites, the issue is with mixing it with the egg whites before you have whipped it.
The only problem was the fact that the meringue was still warm when she added it.
The oil and egg whites is just when you are whipping the egg whites originally.

Jaimee-Louise Warner I think that the street fruits of New York and Chinese supermarket is very cheap (at least in America). You can always switch out blueberries for cheaper fruits from your country.
Food is generally more expensive in Australia than in US (firsthand experience).

June! Happy Birthday! It's always a great day when you post a video! MY favorite cake of all time is the Berry Chantilly from Whole Foods! I love how the frosting isn't incredibly sweet! Just a huge fan of it!
Yeah this seems like it should have been a Swiss meringue buttercream. I usually gently whip my egg whites and sugar in a Bain Marie until they hit like 71c (160f). Then whip it to stiff peaks in a stand mixer. Before adding the butter the meringue and the bowl need to be cool. I think essentially what happened was your meringue was too hot, the butter melted and then deflated everything.

June, about the butter: You didn't add the yolk since it had fat in it, so likewise butter shouldn't have been added since it would have weighted down the meringue you made with the fat content that's in the butter. But who cares about having a softened meringue; the result was still really good!

One of the best cakes I’ve ever had was a buche du Noel in Paris on Christmas Eve probably 12 years ago. It was incredible with all the different layers!

The best birthday cake I ever had was kind of like yours, layered with merengue buttercream and every layer was a different fruit jam. The top was a rainbow of color. I wish I took a picture. My grandmas chef friend made it

Favorite cake: a weird coincidence cake. It was a southern caramel cake, purchased by an in-law cousin for a family reunion outside of Nashville, TN. But when we rode along to pick it up, the baker, unbeknownst to the hostess, lived in the former childhood home of my husband (60 yrs previously)!!! All the way on the opposite side of Nashville, 35 miles away!!! And truthfully, it was the best cake I've ever had, and I am not a carmel fan at all. I could not stop eating it!
Honestly one of the best cakes I’ve ever had was our wedding cake. White cake with alternating layers of taro and lilikoi. Perfection.
Buttercream videos on YT suggest continuing to whip the eggwhite/molten sugar mixture while ice packing the bowl until cool. Then adding butter, but hey, you worked it out. Happy belated birthday June!

My favorite birthday cake of all time was a tie - two different cakes from my childhood being raised in San Jose, the heart of Silicon Valley. There is a bakery on Alum Rock Avenue called Peter’s Bakery where they make the most delicious cake on the planet - burnt almond cake”. It’s legendary. But, their lemon cake with coconut crunchies on the sides is a very close tie for first. June, happy belated birthday and your cake was gorgeous!!!! I’m glad you made it the way you would like it. They have this "Cloud Nine" Cake at the bakery in my home town. They do whipped cream instead of frosting (which I prefer since it isn't so heavy). Its so good. I need to try and make my own whip with coconut cream since they haven't come out with a vegan option yet!

Divine! Your sponge looks so Chinese-bakery delicate mmmm. Re: the soupy filling post- 2 Tbsp of butter. Maybe it's like Swiss buttercream: it starts with a slightly cooked meringue, beaten til cool. Then LOTS of soft butter is beaten in, a Tbsp at a time. After the first few chunks of butter the whole thing turns soupy and you think it's ruined. But after a pound of butter is beaten, the buttercream bounces back and morphs into a silky smooth, shiny buttercream with suppleness and structure. And it's so, well, obviously BUTTERY. Maybe that's what happened?? Happy birthday!!!

I think taro tastes pretty good in sweet baos and moon cakes (found in Chinese bakeries) but I've never had it in a 🎂. Taro is what made this cake unique! Thank you for not choosing something basic and typical like a chocolate or vanilla cake!

I love Marks and Spencer's birthday cakes, they're colourful in a plasticy way, they're relatively cheap (£5 for a smallish one), they have a one-sheet coat of icing obviously made in a factory that you could peel away from the cake part in one go, a fluffy vanilla sponge interior and sweet and tarte jam in the middle of the layers, they're very sweet, almost too sweet really, but oh my I love them and they take me right back to childhood

Happy birthday June! I am also a Libra! Taro is one of my favorite foods and when you naturally colored it with the blueberry purée I was like 🤯. My favorite cake is one I used to ask my mom to make me for my birthday- date nut cake, but with chocolate chips sprinkled in. So moist from the dates and not too sweet but with a little chocolate and a lot of nostalgia. Love all your videos!

My mother is German and not much of a baker, but she makes me my favourite cake for my birthday, a Frankfurter Kranz. Her version is a two-layer cake separated by a layer of apricot marmalade. The frosting is a heavy butter cream, for which she uses a custard powder as base, and then topped with candied almond. So good, especially since it's made with love :-)

Happy cake day June! Taro cream is brilliant I’ll definitely try that since I love taro bubble tea and taro ice cream. Grew up in China, I also like light sponge cake with whipped cream and fruits! I also like Japanese cheesecake, and tiramisu, anything that’s not too sweet or heavy.
For the frosting, I think 2 tbsp of butter is not enough to stabilize the meringue. But if you keep adding more butter, it will eventually turn into a stable Italian buttercream. You can fold whipped cream into the buttercream to make it lighter.
Favorite cake: dark chocolate with chocolate whipped cream between the 4 layers covered with dark chocolate ganache! Lol, if you can't tell i LOVE chocolate! !!!!!

The bundt cake with raspberry icing my mom made me for my fifth birthday.
One of my favorite memory of a cake is when my grandma applied frosting to a still-warm cake [by mistake], and the frosting melted into the cake. That was one of the best tasting mistakes ever! Still today, I apply the frosting on my still-warm cakes.

The best birthday cake I ever had is a three-way tie - a fresh raspberry charlotte made with homemade lady fingers, a Black Forest cake (Schwarzwälder Kirschtorte) I had when I was living in Germany, and a white peach mousse cake that was sublime. A runner-up was a from-scratch German Chocolate cake made with the recipe on the Baker's chocolate.

The best piece of cake I ever had was a tiny slice of a cake in a small village in France (St. Zachary.) It was chocolate with feuilletine and hazelnuts. Yum.

They always say that egg whites don’t whip when there’s fat in the mixture, that’s why they say wash your bowl before making whipped egg whites . That might be the reason. Happy cake day 😂
