I followed your recipe and my jerk chicken was a hit. I'm Jamaican and my mother makes everything on your channel, but that JERK was something else. She said she ate it to the bone!
Fire management- I’ll be using a Weber grill with kingsford charcoal and once well lit I’ll add lump coal. I’ll try having the bottom vents wide open to encourage flame but the vent on the lid will be close to fully closed. Maybe the width of a pencil. No idea if this will work but worth a shot.
Was looking for a comment like this… top has to stay closed for sure. What i think id do is get my appetizers out the way first so the coal is heated up well before i start the jerk has some lump coal
I was was lucky enough to stiff have some pimento sticks to put the chicken on and still had a few pimento leaves. I think even if I didn’t have these, the steps in this video would work perfectly.
My first doing grill jerk chicken. Good to know that I should use just a handful of charcoal. Oh, I wish I could taste your jerk chicken. I have my chicken marinating now.
Racquel i actually take time off from work to view your delicious recipes, you make cooking look easy and I'm starting to feel to cook again... thank you so much
Looks so delish, I’m going to try it tomorrow, but I have a question. If I don’t have the Grace jerk seasoning can I just use the Walkerswood Hot & Spicy?
RA THE TRUTH AND THE LIGHT Hi RA, are you in the states or the Caribbean ? You can get an oil drum and get a welder to make one for you. Any type of grill can be use also
The slow, indirect cooking looks great for this, I bet it tastes beautiful

Looks delicious!
Great video miss cleo. I jerked my chicken the entire time.
How spicy do you think it is? I’m going to try this for the holiday but my family is scared of too much spice lol & I’m heavy handed.
Marissa Godwin it wasn’t that spicy, I use the mild Jerk instead of the hot.
I can guarantee it was so delicious though 😋😋
Racquel’s Caribbean Cuisine thank you!! can’t wait to try it 🤩
How do you get the charcoal to keep it's heat for 90 mins? Do you have to add more charcoal at points?
Good charcoal last 3 hours depending on weather conditions
Hello Racquel! If I wanted to make a smaller batch of this how would you recommend changing the recipe?
What is the dry seasoning recipe?
This is absolutely amazing❤️❤️ great work. Can you share your recipe for your homemade bbq sauce? It would be greatly appreciated.
Recipe is in the description box
Thank you 🤗
Racquel’s Caribbean Cuisine oh lord. I’m sorry I didn’t see it🤦🏾♀️ I see it now. Thanks very again❤️
Sorry one last question. When you mean pimento peppers, do you mean scotch bonnet peppers?
No, pimento peppers are for flavors, it’s not hot. It’s found in the Caribbean, mostly Trinidad. They can be excluded if not available.
Racquel’s Caribbean Cuisine perfect! Thank you😊
This jerk chicken looks so amazing! And extremely tasty. Where are you from?
👍🏿🤗🤗

What temperature should the grill be on?
Hi Manny
Using a Jerk Pan with Charcoals, so there is no temperature gauge
Medium if you understand charcoal. more heat than fire. Bless up Racquel.
What do I serve this with?
Anything on your choice
Bread, Jamaican Rice & Peas, Festivals… the list is endless
Racquel i actually take time off from work to view your delicious recipes, you make cooking look easy and I'm starting to feel to cook again... thank you so much
You are most welcome Jasmine, thank you 😊
What temp should I have the grill set too?
Kalico Jones
I used charcoal
I am gonna cook this up this weekend 😋 quick question have you got a recipe for the jerk sauce?
I use ketchup and jerk seasoning mix together and cook on fire until liquid and it's bomb 😊
How warm should the grill be?
Looks so delish, I’m going to try it tomorrow, but I have a question. If I don’t have the Grace jerk seasoning can I just use the Walkerswood Hot & Spicy?
Walkerswood is the best!
Hot & Spicy is very hot though, try mild if you are afraid of spice
Thanks Shari 😊
@@RacquelsCaribbeanCuisine thanks for responding. The ppl I’m making it for loves spicy food, so they requested it lol. Thanks again and God bless ❤️
@@RacquelsCaribbeanCuisine Another question Ms. Racquel, should I put oil while it is in the marinating process?
No oil Shari, no oil whatsoever
@@RacquelsCaribbeanCuisine Ok thanks for the info, I already seasoned and it’s marinating for tomorrow, I’ll update you then. ❤️
