    I followed your recipe and my jerk chicken was a hit. I'm Jamaican and my mother makes everything on your channel, but that JERK was something else. She said she ate it to the bone!

    Fire management- I’ll be using a Weber grill with kingsford charcoal and once well lit I’ll add lump coal. I’ll try having the bottom vents wide open to encourage flame but the vent on the lid will be close to fully closed. Maybe the width of a pencil. No idea if this will work but worth a shot.

      Was looking for a comment like this… top has to stay closed for sure. What i think id do is get my appetizers out the way first so the coal is heated up well before i start the jerk has some lump coal

      I was was lucky enough to stiff have some pimento sticks to put the chicken on and still had a few pimento leaves. I think even if I didn’t have these, the steps in this video would work perfectly.

      My Jerk Pan is not electric, use charcoals. Doesn’t have a temperature gauge.

    How spicy do you think it is? I’m going to try this for the holiday but my family is scared of too much spice lol & I’m heavy handed.

      Marissa Godwin it wasn’t that spicy, I use the mild Jerk instead of the hot.
      I can guarantee it was so delicious though 😋😋

    How do you get the charcoal to keep it's heat for 90 mins? Do you have to add more charcoal at points?

      Good charcoal last 3 hours depending on weather conditions

      Sorry one last question. When you mean pimento peppers, do you mean scotch bonnet peppers?

      No, pimento peppers are for flavors, it’s not hot. It’s found in the Caribbean, mostly Trinidad. They can be excluded if not available.

      I use ketchup and jerk seasoning mix together and cook on fire until liquid and it's bomb 😊

      Walkerswood is the best!
      Hot & Spicy is very hot though, try mild if you are afraid of spice

      Hi RA, are you in the states or the Caribbean ?
      You can get an oil drum and get a welder to make one for you.
      Any type of grill can be use also
