Replying to having made this recipe…..I made this and did a few variations. After pressure cooking and draining, I added 1/4 cup sour cream, 2 oz cream cheese, salt, pepper and chives and blended in my food processor. They were a little runny so I added about a teaspoon of glucomannan Konica root powder as a thickener, along with potato extract for additional flavoring! They were WONDERFUL. I fed them to my family and they didn’t know. Thanks for this new best way of mashed potatoes 😂.
My son brought one home for me to cook. Been boiling it for a while now does not seem to get soft like a potato. Will put it in the blender and add butter and salt , but it's seems hard to cook

I have got to say, I am so excited for this new keto addiction to my meals. Soooo delicious. The texture is amazing as well. I adore jicama cut into strips and tossed with lime juice and seasonings in salads and as a snack, and it is amazing sliced very thinly and used as a wrap for tuna salad or Asian pork. I haven't had any luck cooking it to use as a potato sub though--too watery and sweet, but I'll try pressure cooking it and see what happens. Meanwhile, my go-to is celeriac. I peel, dice, and cook it in a little cream until very soft, then food-process it with butter, sour cream, salt & pepper, and it makes the best mashed potato sub I've ever had--we even like the subtle flavor of it better than potatoes, and that's saying a whole lot!
I was telling my husband this morning that I really miss mashed potato when I am on Keto. I am going to try this as soon as I get my hands on some Jicama. I also have some mashed potato extract that I will try adding. I only found you a couple of days ago and I have been binge watching you. I cook mashed cauliflower fairly often and i do like cauliflower in any form. I think it is quite tasty. But it is not mashed potatoes. The secret to mashed cauliflower is to cook the water out of the cauliflower to improve the texture. But I had never thought about using a jicama. I will definitely try this. A cut up jicama looks just like a cut up potatoes and it has a hard consistency just like a potato. Since a jicama has a mild flavor I thnk if I dump some gravy or sauce on top of my mashed jicama it may not taste just like mashed potatoes but will have a good flavor and texture. I am anxious to try this. I never wold have thought of this. What an idea.
I tried this last night and it was very good taste-wise. The only problem is that it was too liquidly and it was pretty buttery tasting. I think my "two jicama" might have been smaller than yours because my cooked jicama did not fill to the top of my blender. I'd be curious how much your jicama weighed after it was peeled and cut.

I need to try this. So far, I’ve only made jicama fries and bits of shredded jicama in a salad. It is a very satisfying vegetable and a good source of prebiotic fibre. Jicama fries hold up well in the fridge and make good leftovers. A little goes a long way.
You can make a gratin by using Daikon Radish. Slice it like you would a potato then boil the heck out of it. 45 min to an hour before it loses the radish taste. From there the world is your oyster. Top it with cheese or queso and heat thru… or use sliced tomatoes, sliced squash and sliced daikon. Layer those across your pan in repeated order. Season. Your daikon will already be cooked but you can cook it again just until your tomatoes and squash break down a little and heat through. Top it with a little cheese and bake for another 5 or 10 min.

a turnip would be better as it has 8g of Carb per cup (6g per 100g of turnip), but parsnips are very high in sugar like carrots, and have 18g carb per cup (very similar to potato) but I have to confess, I LOVE baked parsnips. so yummy.

Trying this now & halved the recipe. I did cut into 1" or less chunks, cooked in the instant pot for 1 hour with a natural release but my mashed jicama is not softened enough for mashing (no blender so using a hand mixer, chunks were flying everywhere LOL). Any ideas? I do like the flavor, slightly different than potatoes but pretty close.

I can't wait to try these, i always use cauliflower but i add cream and or liquid smoke or smoked cheese to it, it's delicious but this sounds simpler to make. I can't find liquid allulose in Canada and i want to know if you know how to make it. I searched and it seems easy enough just mix it with water but i'm not sure if that will replace corn syrup as it's thicker. Love love your recipies!!!

Boil for 1 hr…. It takes quiet a long time to get this soft and even after 1 hr u may think it’s still too hard but once u put it in the blender it disperses very well with liquid
Oh good question. Now that I haven’t tried but I would boil if I didn’t have an instant pot. How long though I don’t know. Jicima is strong so it will take quite a while. You will know when your fork goes into it gently without much pressure.
I don’t know what I did wrong! My jicama was white just like yours, once I did the pressure cooking in the instant pot it was brown. It just looked nasty, anyone else??

I don’t know if you are aware of it or not but there is a mashed potato extract…..Adding that flavor to this might just put it over the top

I like to compare these to red potatoes rather than russets because of the slight sweetness. I LOVE COOKED JICAMA!

I like jicama for some things, but for a potato sub, I prefer rutabaga. To me it has the most potato like flavor and half the carbs
I wonder if you combined like one rutabaga and one jicama together with some butter and milk if it would pick up a little more potato flavor

For a recipe like this frozen jicama would work. Just peel it and cut in cubes and freeze
Milk isn’t Keto. I would use whole cream, or at least half and half.
I think she has used Farilife whole milk in the past. That one is lower carb, and I forget what else is different about it.
