  • How to boil up a lovely bit of gammon and make delicious pea and ham soup from the resultant stock
    A word of caution about gammon. I had a mate who worked in an abattoir (slaughterhouse), and he said the one thing he would under no circumstances eat again was the "formed" gammon they sell in supermarkets - it's scraps rolled together in a ball and made to look like "gammon". It's disgusting and nothing like the real thing. I get mine from Dave, the egg and cheese guy at Tewkesbury market. He slices it up and packs it himself and it's excellent, real and cheap. I get eggs and cheese from him too - just compare the prices and the quality.
    Dunno what happened to my mate who worked in the abattoir - last I heard he and his Mrs were living on a boat and he was washing down 747s at Heathrow for a living!

    Get yourself a deep wok mate if you are making soup in an open pan. Much easier.

    Great Video. Maybe the next one try and keep the eating noises down a bit as there was some chomping going on at 7:45. I also loved the comedy with the liquidiser. Keep it up!!

    Between the Campbell's Soup and processed cereals, my mother made great homemade food. We peeled and chopped, set the table and cleaned, but she also found ways for us to cook together as well, and not just cakes, pies and cookies, which was great too. I realize what she gave us is invaluable. Glad to see you're in a good place now. I'm going to look for that ham but here in America I don't know where I'll find it. I lived in England when I was a teen and it was the butcher, baker and Sainsburys (never Harrods) for us and lots and lots of New Zealand lamb and bread and butter pudding as a treat. Whoever said English cooking is terrible never cooked English food. I miss English sausage.

      How interesting! The last time I was in the US, in Winchester, Virginia, I was well impressed by the sheer amount of food you got for your money - in particular I remember a massive tray of fruit that we bought from one of the big chains for $5! I wasn’t so impressed by the quality of the food from the big chains, like Red Lobster, for instance. Here in Tewkesbury we are lucky to have two excellent butchers, who both make their own sausages, of which I am extremely fond, but have to limit my intake due to waistline issues!

      But it really does look beautiful. Frozen peas are very economical and I like to eat them frozen as a snack.

    You can’t beat making good old fashioned grub. I bought a gammon hock today and I’ve just cooked it in the instant pot with bay leaves, black peppercorns and cloves so I’m going to make your lovely soup tomorrow... if there is any left because sticky ham is as addictive as crack.
