Great video but what did you use for brine and how long did you soak the fish in the brine?
i use brown sugar, salt, and a bit of honey mixed in a bowl

I like using soy sauce but cutting it with a little water and letting it sit overnight then smoke it with the skin on.
I use soy sauce and a cup of apple juice, keep it in the fridge overnight.
Can’t be good with lighter fluid…
