This is an unbelievable coincidence I literally just bought ground beef because I wanted to try making Japanese Hamburg steaks for the first time tonight and now I can follow along with the champ! Now my Hamburg steaks will be unmatched.

Actually quite similar to swedish meatballs. We also make "tsunagi", using normal breadcrumbs instead of panko, and also add diced vegetables to the mince (often only onions and maybe carrots). Also after frying off the meatballs we make a pan sauce called "brunsås"(brown sauce) using the same pan used for frying, although it differs quite alot from the one you made. It was fun to see the similarities and I hope to try making hamburg steak sometime!

I spent alot of time living in Hamburg Germany growing up, my favorite food was Frikadellen which where made in a similar way to yours where except the no carrots and the onions where grated. Each family, diner, resturant had there own versions with different ratio's of herbs and spices, all used onions to a greater or lesser degree, some used carrots and celery. Below is the recipe my family uses, feel free to use it and adapt it your your own liking, i grew up with this so others maybe great but they are not home. You can use panko or any bread crumbs you like as i rather doubt you will be able to get german farmers bread outside of germany or unless you bake your own. 500 g ground beef & pork , 80% meat 20% fat recommended for moist Frikadellen, more fat the moister and more fragile the burger. 1 medium yellow onion grated 2 slices German Farmer’s bread, Bauernbrot *1 (about 2 oz or 50 g) 60 ml warm water, milk or stock Panko will work very well. 1 large egg 1 clove garlic , minced 15 g chopped fresh parsley 1 1/2 teaspoons salt 3/4 teaspoon freshly ground black pepper 1 teaspoon prepared yellow mustard 1 teaspoon dried marjoram 1 teaspoon sweet Hungarian paprika 1/2 teaspoon ground ginger 1/4 teaspoon ground mace 1/4 teaspoon ground coriander 1/8 teaspoon ground cardamom *1] German Bauernbrot or German-style Farmer's Bread. Is a combination of rye, whole wheat and high-gluten bread flour, and a combination of some typical German bread spices: caraway and fennel seeds, a bit of ground anise and coriander. What an intriguing question. My first thought would be konbu dashi as the base of the gravy. Chashu as the roast? Japanese Coleslaw on the side, along with roasted vegetables.

I made this tonight, it's an EXCELLENT recipe. Thank you for explaining the techniques. The sauce was too sweet IMO, either omit the honey or I added 1 tsp soy sauce for needed salty balance.
I'm not much for hamburgers...I don't know what it is about the ones cooked in fast food joints but I've never had one I liked..something about the taste just isn't right. I tried making my own recently and enjoyed it much more...but it's a pain trying to use up all the buns (cheap as the ones I buy are) before they go moldy, so Hamburg steak or Salisbury steak might be a good use for beef aside from when I make it into tacos...though I prefer leaner ground turkey for tacos. Also...Somebody get Jas Townsend on the horn, we got Nutmeg in a burger! Lol, for those who may not know, Jas Townsend is all about 18th century or thereabouts American history...stuff like the colonial era, and he does cooking vids on his channel and nutmeg is VERY common to the point it's a bit of a meme among his fans. Apparently back in the olden days of America nutmeg was one of the most common spices to use in dang near anything...sweet or savory it didn't matter.

Planning to try this as is soon. I luv mushrooms, though my mom isn't a fan of fungus lul. Any suggestions on a good substitute for that 1 ingredient? Or would it be better to just remove the shrooms but otherwise keep the recipe intact?

That hamburg looked crazy delicious, but you showcased why I don’t eat them too much: the use of butter. I can’t eat almost any kind of lactic product, so that is a bit of a shame! A lot of restaurants also fry the patties with butter instead of olive or vegetable oil, so that’s something else I have to be careful of.
