  • ....continued from my previous video titled "My 4-cup Brikka Prolem (Part 1) - Never Creates "Crema"", all the bean and settings remain unchange.
    My 4-cup Brikka problem (no "crema", different mouth feel, color and taste from 2-cup Brikka) is solved with the changed of funnel to 6-cup Moka Express funnel! At the end of this video, I compared the 2 coffees. Left hand side was the "no crema" coffee, which was using 4-cup Brikka funnel.
    Change of funnel saved my 4-cup Brikka. But, I still don't understand why my funnel can cause no crema. Now I enjoy my 4-cup Brikka coffee every day. For those who having the same problem as mine, hope this video helps.

    Less heat! You want a nice slow steady flow of coffee, not a explosion. The best result we got from our brikka is freshly ground beans. Finer than pre-ground but courser than espresso . Soft tamp. Lowish heat. When it starts to pour get ready with a tea towel just before the end of extraction press down on the weight to stop the flow this helps eliminate the sour over extraction.

      This is a v1 Brikka, so it will always "explode". The v2 Brikka has a different valve design, which results in a smoother flow.

      Should i use Fine grind coffe or medium grind coffe? I don’t have any coffe grinder so i’m hoping someone could give a little insight in here.

    Hi. I think I read about this. On some funells there were little holes on the side to bottom "corner" due to manudacturer fault. Try to check it out.

    Instructions state brew and discard first 3 coffees before you use.
    I used very old coffee pre ground. I got a brikka crema everytime. Then used fresh ground beans , not to fine ground . Crema everytime, I cant see how you cant get a crema, its self working.

    The problem most likely is a defective funnel on your 4-cup Brikka as shown by using a different funnel from another Bialetti model.

    I tried several combinations on my Brikka. Noo always work but my best is: exactly water level no pass the mark on the pot, prewarm the water until it start to boil and put it into the Brika and then close the brikka inmediatly, use ground as courser as expresso and tamped it very light almost without pressure, use ver very fresh beans (more Co2 is the key and fresh beans are full of it), and stop the proccess exactly at almost the end of extraction an pour it on the cup inmediatly. Almost ever works fine.

      I did not try the new Brikka yet, they changed the pressure valve and i am sure it improve the process in order to get crema easier.

    VERY first important thing : always freshly grind coffee, which means just BEFORE making any kind of coffee, filter, espresso, bialetti

    This might sound stupid, but I always make sure the valve on top is loose, by shaking it a few times, plus I use hot water, comes out great.

    Thanks for videos!! I have a similar problem. My 2-cup brikka is working good. I'm really happy with it and my 4-cup Brikka actually creates enough "crema", but the taste is really bad (using the same coffee). I've done a lot of coffe's hopping that the taste will get better..but if it continues like this, i'll give up soon!

      @@raid1734 You have to notice that the coffee grounds extract the flavours this way: First acid (stringent) flavours, then extract sweet flavours and finally bitter flavours. In a 9 Bar Expresso coffee machine the balanced flavours you get between 24-26 seconds of extraction, if you overpass this time you will get bitter falvours or even burned ones but alos if you underxtract the coffiee beans (less than 24 seconds) you will only get acid coffee. In Brikka Bialletti machine the process is different, it dows not reach 9 bar pressure, at least 2 bar but the process in some way is similar so you have to be alert on the time the beans are cooked, remember that the coffe is cooking no only when you see it puring out from fannel, but they are cooking before but stopped by the pressure valve.

      Use coarser grind to reduce bitterness taste, also shorten the brew time by using hot water and on smaller flame, move the pot away when you see crema is coming. Pour the coffee out immediately. Hope that helps.

      Galin Dimitrov in general you want to use Grind #4 for moka pot but maybe a tad finer for Brikka. Also a medium roast is better. (I don’t own a Brikka it’s just what I read doing my research). I’m looking into purchasing one myself once they are back in stock :) Hope it helps.

    Всё очень просто! В новых Brikka на 4 чашки трубка на воронке имеет маленький диаметр. Да и клапан похуже, так как сделан не в Италии. Если хотите чтобы работала старая воронка, то нужно срезать старую трубку, увеличить диаметр отверстия приблизительно на 4мм и приварить новую трубку такой же длины, но внутренним диаметром на 4мм больше! Ещё больше увеличить пену поможет груз на 10-15гр. который положите на клапан сверху. Таким образом вы увеличите давление выброса. Мне это помогло. Работает лучше чем Brikka на 2 чашки. Всем любви, добра и удачи!
    Everything is very simple! In the new Brikka 4-cup tube on the funnel has a small diameter. And the valve is worse, because it is not made in Italy. If you want an old funnel to work, then you need to cut off the old tube, increase the hole diameter by about 4 mm and weld a new tube of the same length, but 4 mm more internal diameter! More increase the foam will help the load by 10-15gr. which put on the valve on top. This will increase the discharge pressure. It helped me. It works better than Brikka on 2 cups.     I think your coffee ground is too coarse. hence when pressure is building up, when it should be pushing through the ground, it's making a hole in the coarse ground and straight out. if the ground is fine, the steam should filter through, thereby extracting much better and it's that slow steam pressure that creates the crema. I'm no expert, just my thoughts.

      Totally! I'm a Brikka user, and coffee ground the exact size is really important. Too thin and you get muddy coffee, too coarse and you get just coffee and no cream.

      I use Café Bustelo Espresso Dark Roast coffee stored at room temperature, and compact just a tiny little bit. In addition the 4 teaspoons of sugar whipped with 1 teaspoon of brew. Works for me. Trial and error.

      Clay Pratt My grinder brand: Yami, Model: YM-686. Not sure is Taiwan or China made. 230 Volt.
      For your info, this type of grinder has many brands, motor (different power), blade (China, Italy, Japan) and even bearing (China or Germany). All looks the same, but different specs. If good specs, it really a good grinder.

      Thank you. I actually did finally find the Yami brand, and some others. I find that most are 220v and a few are 110v. Beyond that the info is very limited. I think I will end up ordering one soon anyway. I really like the idea of dropping the beans in and grinding fresh every time. Right now I grind a weeks worth at a time in a nice burr mill.

    If I'm correct you extracting more coffee with the same amount of water (6 cup instead of 4). So you have more dense coffee and stronger crema. Your 4 cup weak(er) crema falls apart (basically instantly) when you pour it out in your cup.

      They are also using cold water....that's kinda a no no. They should fill the bottom with boiling water this will help the coffee not heat up pre-infusion and keep in the CO2 that creates the crema. That brew is also way too slow for crema. They should check out James Hoffmann's stuff. Their previous funnel would work fine if they changed their method of brewing.

    I think because of deeper coffee chamber it creates more pressure and you are getting crema like expresso machine
    That is my conclusion I may be wrong

    Loved mine the first 6 times I used it then started having all kinds of problems. Took it apart, cleaned everything, replaced gasket, replaced filter, worked once since. I ordered a 6 cup Bialetti Moka Express funnel (by mistake) BUT it won't fit my 4 cup Brikka so not sure how yours did. (?) Bialetti website is no help. About to throw the whole thing in the trash.

    Yhe water level should be below safety valve, may be if water higher than water level, the pot cannot build pressure to generate cream.

      That's how bialetti brikka works. It does have a different method of dosing the water compare to other mokapot. I have that 4 cups brikka, do the same routine like he does, and the result is great. The foam (not an actual crema) always comes alot like what he get with 6 cup express funnel.

    Roasting beans takes place at 370-540 degrees. You can’t burn your coffee with water, the beans were in twice as much heat when they were roasted.

      It's a weight that needs to come up when the pressure is sufficient. That creates the crema/foam

    Hi! I have a 2 cup brikka, I see that a little leak during brewing is normal, right? Unfortunately I don't have as much and thick cream as you, but next time I try in glass cup. Do you keep gas on low medium or high?

      Hi! You mean little leak (transparent mild colour coffee) coming out before final bust? That is normal. But if air leak between bottom chamber and upper part is abnormal.
      Thick cream depends on coffee freshness or percentage of robusta mix in the coffee (more robusta, more crema). I keep gas high but within the moka base size.

    If you want to have crema , you must have arabica+ rabusta. If you not have rabusta not will crema!

    Just by watching this video, I think the rubber seal isn’t sealing. It takes ages to come and then when it does it explodes. Check your seal.

      I have a 4 cups at home and makes a wonderful coffee since longtime.
      At work I bought a Mokka Timer and a 2 cup Brikka, switched the upper parts (the screw of heads is the same).
      The 2 cups Brikka really struggled to give me a creamy coffee like at home.
      Than I read your post and gave a try to tighten more the head on the base, so joints are more squished and sealed.
      It worked!

      sorry...but bolling water just burns the oils of the coffee and doesn't allow the slow release the flavors such as 91 or 92 deg.F

    from the video you can see that there are several models, I'm buying my first one, which would you advise? Brikka or Moka express? I also saw that there are two models of Brikkas, the new one with an integrated valve and the older one shown in your video? which of the two makes a creamier coffee?

      Buy the latest model. It builds up more pressure and produces more crema.

      黄鹏 It tastes as good as my 2 cups Brikka. Much better than my previous 6 cups Brikka funnel. I just found, my origianl 6 cups Brikka funnel has leakage. That's why it never create crema and the coffe takes long time to brew and burnt.

      Yes, Brikka models have only 2 cup and 4 cup funnel. There isn't 6 cup funnel.

      U bring your funnel and torch light, go dark room, light into funnel check and see is your funnel leak at join or corner. Mine leak at the side corner. If leak, just change to new funnel.
      My country cannot get Brikka 4 cups funnel, so I replaced with 6 cups moka funnel. It work perfectly. But heard some said 6 cup moka funnel cannot fit properly with their 4 cups Brikka size. Maybe different batch different specs.

      No, I usually do 3/4 and it's fine. A tad less intensive which I like.

      It depends on how strong you want the coffee to be. I would just advice not to overfill and not to compress the coffee! Have a nice brew

      If your pot has no problem, you do not need to change to 6 cups Moka Express funnel. My 4 cups Brikka (newly bought) could not create sufficient pressure to pop up in normal timing, it took 8 to 10 minutes to pop up (very unusual) and my coffee always over cook. I could not find original 4 cups Brikka funnel in my country, even from neighbour countries not selling it. I have 6 cups Moka Express, I found the size is exactly same, so I switched my "4 cups Brikka funnel" with "6 cups Moka Express funnel", and it works perfectly!
      Finally I found out the culprit was my Brikka funnel has a crack line between the top and the bottom pipe. Until now I still cannot get original 4 cups Brikka funnel in my country, so I am still using 6 cups Moka Express funnel in my 4 cups Brikka. And I am happy with it.

    Looks like your crema valve is dirty. Try to disassembly.clean and assembly the crema valve back.

      I ordered three times before I finally received the right item. There was a different seller that was a little less expensive but kept sending me just a traditional moka pot.       Because water is cold .... that's why & second it needs to build up pressure until starts to brew!

      it's physics thing, the more pressure work on the liquid then the longer time you need to make it boil

    It's impossible to replicate what happens in an Espresso machine, with a modified stove-top moka pot. They are completely different processes.

      Before the espresso machine were invented there was this moka pots, of course the machine improves the results but the process is the same.

      Yes. Solved. I used a torch ligh, went into a dark room, light into the funnel, found there is a crack from the side of the funnel. Changed a new funnel solved the problem.

    Water should be pre-boiled before putting into the moka. Other wise the ground coffee will get too much heated.

      Yes, for Moka, I always pre-heat the water. But not for Brikka.

      Roasting beans takes place at 370-540 degrees. Boiling water is not going to make your coffee beans get too hot. It can’t happen unless your using oil instead of water.

      @@RedThunder0000 Read James Hoffman's book or follow his channel......Its not just about coffee taste issue.Infact, It also help to extend the rubber seal lifetime.
      And for your information...
      The beans roasting process at high temperature starts with non-roasted beans.

      Mine ok. But I heard from some user feedback, not all batches has same built. So recommend you change to original 4 cups Brikka funnel.

      After that I found that my problem was due to faulty funnel. My Brikka came with cracked funnel. I went into dark room, used torch light to light into the funnel, and found there was light leak from the bottom of my coffee basket. Just change a new funnel and the problem solved.
